My Bottom Line :
Grapes, roasted malts and molasses move into leafy hops and their bitterness in this balanced, drinkable Imperial Stout.
Further Personal Perceptions :
-A veil of foam covers the blackness.
-Malts offer chocolate too, though not in an eloquent manner.
-Body is soft and rich, while avoiding heaviness.
-The flavor profile gets overly leafy and fruity (grapes) after a few sips. I would have preferred more dark malt flavors.

Bouteille 500ml. De couleur noire et opaque. NeZ de malt rôti, moyen de café, léger de chocolat noir avec des notes de houblon herbeux et des traces de furits (framboises). Moyennement ronde en bouche avec un pétillement moyen ainsi qu’une texture riche, léger-moyen crémeuse et légèrement huileuse. Léger goût de chocolat noir dès l’entrée en bouche auquel se rajoute rapidement un goût de malt assez rôti avec des traces de pain grillé ainsi puis progressivement un goût de café s’installe jusqu’en finale, où y arbore également une légère amertume de houblon herbeux. Post-goût long et aux notes sèches, moyennement amer de rôti avec un moyen goût de café et de houblon herbeux ainsi que des traces de chocolat.

Bouteille 500 ml. Bière noire, collet beige. Arôme: chêne, fruits noirs et grains torréfiés. Gout: Torréfié, très amer et un peu sucré. Effervescent en bouche, finale sèche.

Bottle given to me in December 2011 by my sister in Montreal. Pours a beautiful opaque black with a thick and reasonably stable toffee head. Aroma is strongly roasted coffee, almost like sitting at a cafe. Taste is a bit disappointing though, after all the praise I’d heard from kevinsenn. Pretty full body, of course, but I’m tasting some unpleasant semi-sweet herbal/grassy side notes to my roasty coffee flavour. There’s a bit more sweetness than it should really have given the rest of its makeup. It’s pretty nice, but not mind-blowing.

Bouteille de 500ml, merci Patrick. Imperial stout classique avec sa robe presque noire et la mousse est brune. Le nez est de café, iode, torréfaction et un peu de grain rôtie. La bouche est douce, la torréfaction du grain se mêle avec le chocolat et le café. En finale elle pique un peu la langue par son excès de gaz carbonique. Un produit fort convenable.

A large beige head towers above the black pour. Gently fruity, cerealic and chocolatey nose may not be very complex, but is balanced and well integrated. Alcohol whispers sneak in the background and take even more room on the palate, making it feel a bit stronger than it really is. Great oily oaty texture would be completely filling were it not for the above average, sharp carbonation that dries out the otherwise sweetish flavor profile. Pretty good.

UPDATED: JAN 10, 2012 500mL bottle, Christmas gift from my sister in Quebec. Pours thick and black, with a very thin brown head. Big roasty coffee aroma. Taste is wonderful; smooth and creamy, with big chocolate and coffee notes. Big thick mouthful. At 7.2% it’s not all that "imperial", but I won’t hold that against it, as it is a fantastic stout. Reminds me of St Ambroise oatmeal stout.

(50 cl) Le liquide a une robe noire. Sa tête mousseuse foncée disparaît sans laisser de traces. Au nez, les grains sont torréfiés, finement touchés par des arômes fruités et bien enlacés par des parfums de café. Au goût, les grains rôtis développent des saveurs de café sur lesquelles se déposent une fine couche chocolatée. Une touche de houblons, certainement, qui titille les papilles. En bouche, le liquide a un corps de moyenne densité. Les bulles qui traversent la concoction sont modérément actives. La texture revêt un caractère légèrement huileux. La finale se fait sur des notes amères de torréfaction, très peu intenses mais savoureuses en café et en chocolat.

500 ml bottle. Pours a deep black with slight red reflects. Thick, persistent clear brown head. Smells of burnt grains and dark chocolate. Tastes reminiscent of burnt wood, coffee and dark chocolate. Has a very interesting coffee/cocoa bitterness. Body is thick and oily. Carbonation is weak, but feels just fine. Excellent imperial stout!

Pours a jet black with a gradually vanishing beige cap of foam. Nice roasted character in the aroma, along with dark chocolate and coffee. Solid and rich malt profile all the way through; finishes yielding notes of molasses and dates, the richness curbed by a slight hop bitterness. Carbonation is on the low side and results in a smooth and slick mouth-feel, really seems to moisten the palate after each sip. Alcohol is barely apparent, this is a good one for sure.
