One of the archetypical bières de garde, named after the revolutionaries of 1789, partly inspired by a beer tax dating from those days and suggested to be one of the inducements of the event. Yellowish white, regular, sticky, stable head leaving only a few ’islands’ after a while; colour a warm golden blonde with light orange hue, nicely sparkling, clear but murky after adding the deposit. Assertively fruity, bit sourish aroma of gooseberries, sparkling wine, hay, orange peel, banana, gin, apple, cloves and a bit of dusty yeast. Crisp and refreshing onset, apply with some citrus, tingling carbonation, then flowing out lightly and elegantly malty, dry thanks to the mineral-like, sharp carbonation, finishing mildly but clearly hoppy with some warm, ’jenever’-like alcohol, but not becoming astringent anywhere. To me this is more than just an initiation to its style, as is so modestly suggested above...

Bottle 75cl, a slightly cloudy golden beer with huge head and good retention. Nose is nice on grain, caramel and herbal hops. Aroma is very nice too, good malt notes, light caramel, medium sweet, herbal and earthy hops, good bitterness, light lemon notes with orange touch, very nice.

Bouteille de 330 ml achetée dans une SAQ. Dégustée le 30 mai 1997. Bière blonde légèrement voilée. Mousse peu, col mince et éphémère. Assez effervescente, bulles moyennes à grosses. Odeur de sucre, de miel. Très douce, assez sucrée, goût un peu sec. Bien équilibrée mais manque un peu de goût.

750mL c&c. Clear golden pour with larger white foam. Okay retention with minimal lacing. Nose is skunky thanks to the green bottle. Yellow apple, sugar, esters, old rotting banana. Taste is grassy, watery, soapy. Not much there. Seltzer palate. Disappointing.

Poured from 750 ml bottle after 19 months of cellaring, which is about year longer than intended for this "biere de garde."
Clear bright yellow-gold with a huge white head, excellent lacing and large sediment pieces in the bottom of the glass.
Aroma of grass, grain, yeast and spice.
Taste of apples, grain, yeast, light fruit and a little earthiness.
Medium/light body and medium/low carbonization.

750ml - pours deep gold with plenty of white head. Nose is floral and basement-y. Flavor adds caramel and the typical Unibroue yeast aftertaste. Slightly spicy, but still a blonde ale. Sweet and mildly bitter. the best I could to snub all of those drinking in honor of Cinco de Mayo. Pour la gloire de la patrie.

Pours a nice bright golden amber color. Pretty clear, but I can see a lot of floaties in the bottle. Big off-white head. Good retention and lacing. Aroma is full of sweet pale grain flavor. Lots of fruit. Pears, apples, grapes, apricots, dates. Mild herbal, grassy hops. A faint medicinal note. Just tons of pilsner malt favor. Taste is similar. It starts sweet with that fresh, pale malt flavor but finishes dry with some funk and mild hop bitterness. More light fruitiness, big pear note particularly. Some musty apple/grape skin flavor and feel. Feel is light but full. There’s some prickly carbonation but it’s generally quite smooth due to the full body. Very easy to drink. Goes well with some soft goat cheese. Fun to find a nice example of the style.
