Sample. [2013] Pours crystalline silverish blond with no head. Some legs. Aroma is of apples, fruits. Taste is of apples, fruits, some slight acidity. Palate: Light body. Somewhat dry. Overall: Quite good. Simple. Just a tad acid? Not very complex.

Bottle (750 ml) bought @ La Face Cachée de la Pomme. Split with the Québec crew.

Appearance: Clear pale yellow with pinkinsh hues and a small bubbly and quickly disappearing ring of white foam.

Aroma: Quite floral with mild geneva apples and a light sweetness impression.

Taste: Not much sweetness, mild tartness, geneva apples, floral notes and CO².

Palate: Light to medium body. Medium carbonation. Dry finish.

Overall: It’s easy drinking and quenching. I was expecting a bit more tartness from the geneva apples which I think would have made this one quite a bit more refreshing and enjoyable but it’s a good rosé nonetheless.

UPDATED: JUN 9, 2015 Pours a slightly pink yellow with some nice bubbles. Nose is of straight pommettes juice. Taste is lightly tart and basically just some fresh crabapples juice. Body is light to medium and carbonation medium to high. Overall a fair sparkling cider, I could see myself sharing that with people over the course of summer!

pours unclear yellow, pink hue, with a small bubbly white cap, minimal retention. sweetish red apples, but also berries - wild straberries; flower petals, dust, touch of citrus - faint acidity; plain sugars, minerals, yeast - some bretty dryness. bright carbonation, light body - oily; sweetish fruityy finish. fair sweetish bubbly cider.

Bottle at Mondial 2015 in Montreal with Linh, Ken and Nica. Pours a bright ruby red / pink body. Mouthfeel is tart and dry with notes of dry apple skins, wine and bitters. A nice break to sample this during a sea of ice ciders, but still super dry. Although, of the dry sparkling ciders we tried at the festival, this was one of the better ones.

A dark amber cider with a thin off white head. In aroma, nice apple pulp with light pepper and herbs. In mouth, a rather light watery cider with chalky notes. Bottle at La Cuvée, March 3 2013.

In short: A tart and somewhat dry red cider with strong apple skin character. Good
How: Bottle, shared by the Poughkeepsie-rating-machine with friends under the Vermont stars.
The look: Color is something like the picture, dirty-red, almost no head
In long: Nose is tart red apples, and apple skin, far from the smell of concentrate apples of many basic ciders. Taste is more of the same, strong apple skin sensation, tart apples, mild acidity, a light musky character. Finish is rather dry. Being from Quebec I should be the number one cider fan on ratebeer, I’m not, but this was quite good, but I’m wasn’t overwhelmed by it like my friends were (I’m a very bad cider judge btw). A bottle shared at the crazy Hill Farmstead anniversary party when I got particularly hammered, and if you ask me if I’m ready to go back next year then I’ll tell that I was born ready, a fact that has totally baffled medical science ever since I was born.

Huge thanks for the share on this one at the HF afterparty. Dry crisp and refreshing with tart apples and just the right hint of fruity sweetness to make you want more. A delicate earthy bite mixed in gives this a bit of complexity. Loved it.

Bottle shared by Jay at the HF anniversary party. WOW! was this apples? Those canadians dont fuck around. Sweet sour type apply flavors balanced with sweetness. Great stuff!

Bottle of the 2010 edition that Andy, Max, and I took to the Hill Farmstead second anniversary party. Pours a clear ruby garnet color with a thin white head. Sweet acid, bright ice cider style apple notes. Sweet acid, medium bodied. Tart acid, dry apple. Long musky apple finish. Delicious stuff.
