COMMERCIAL DESCRIPTION
’A taste of Québec’s winter... and warmth! Dégel is the product of the sugars still held captive in the ice that is at the origin of Neige, our apple ice wine. When exterior temperatures rise, country steams begin to flow and spring is once again on its way, we transform the apple must’s second run into a fresh and delightfully fruity elixir. Dégel can be enjoyed on its own as an aperitif, or as an accompaniment to white meat or fish. Serve iced.’

Very clear, pale greenish yellow with the slightest legs. Apple skin, dry without any of the rich face cache de la pomme sweetness. Woody and herbal. No acidity in mouth, watery flat with a light oiliness, sharp yet well contained 13% ABV. Like chewing on a woodchunk, too dry for me, I’d probably like it more sparkling in that regard.. or simply with more apple flavours. Watery, astringent and vinous.. Even the best breweries can’t all make only the best products.

Pours a crystal clear pear yellow and is still. Aroma is subtle, slight tannin. Taste is fresh, slightly astringent, not the sweetness that you would expect but an easy drinker.

bottle at the cidery - This tasty cider reminds me of a dry to semi-dry white wine and would be good with food. It’s a still cider with tasty, tart apples and is very easy to drink.

Bottle. Pours a clear golden straw color. Big sweet apples with a touch of honey and sugar. Not as thick on the nose as an ice cider, but a lot of that lovely sweetness and a bit of tartness. The sweetness from the nose doesn’t translate to the body, not very much sweetness at all. Dry apples, a bit of alcohol coming through. Finishes with a tart apple note, a touch of warm alcohol and a bit of yeast.

(75 cl) La robe est scintillante et dorée. Au nez, les pommes sont vertes et définitivement touchées par la brise qui souffle les champs fleuries. Au goût, la chair est juteuse, finement acidulé et doucement caressé par les sucres. En bouche, le liquide est finement structuré. La texture est tout de même soyeuse. Un cidre savoureux et rafraîchissant.

Sampled from the bottle. Poured a clear yellow with a slight gold hue and no head whatsoever. Aroma was quite sweet with apples and apple blossoms and was nice and crisp. Flavor was sweet as well with apples and apple blossoms and a hint of acidity to help balance.

Tasted at Face Cachee. Pale golden-straw pour. The nose is lightly spicy. Softly tannic with a very light citrusy/malic tartness. Very fruity on the nose with a kiss of green apple tartness. More tart flavour than there is on the nose. Bright and quite lovely.

Pale blonde. Much less sweet than their famed ice ciders, more acidic like a white wine, but with an apple angle. Works fine for a white wine replacement but doesn’t pop out.
