COMMERCIAL DESCRIPTION
Produced since 1994, Neige is the leading inspiration of La Face Cachée de la Pomme. It is the very first ice cider (also known as apple ice wine) to be commercialized in Québec and throughout the world. Neige Récolte d’hiver – produced from a variety of apples that do not fall during the autumn season – is available in a limited edition series of 5866 bottles for the 2007 harvest. Edition 2008 is limited at 10 560 bottles. Picked between December and January, while the temperature was approximately -15°C, the fruits still hanging on trees were dehydrated by the sun and literally cooked by the cold and wind. Sugars were concentrated through natural cryoextraction. Frozen apples were then pressed in order to extract the precious nectar. The extracted must was then placed in stainless steel tanks where it fermented for a period of approximately eight months, at low temperatures, before being bottled. Previously 11% abv. Current vintage (2009) is 8% abv.

A dark orange cider with no head. The aroma contains notes of apples and some rotten fruit. While the flavor also is dominated by apples - again with a slight note of rotten fruit, but also some acidity. The mouthfeel is smooth, but at the same time sticky.

(Bottle 37,5 cl) Courtesy of Ungstrup. Clear, deep amber golden - no head. Complex aroma of overripe apples. Very full-bodied, extremely intense fruit notes - almost strawberry-like. This really is a desert wine, but one that’s tough to drink and digest. 280907

Bottled, thanks fiulijn! Clear deep amber. Concentrated aroma of fresj apples. Sweet and viscous with oily mouthfeel. Full bodied, yet soft. Highly concentrated, yet not overpowering, with a huge array of flavour; viola red apples, honey and balsam. Perhaps a bit sticky, but overall one of the most amazing ciders I’ve tried.

Bottle from the La Face Cachée de la Pomme stand at the Christmas Market (Marché de Noël), La Défense, Paris
Vintage 2009, 8% ABV

Limpid Baltic amber made into liquid. Deep aroma of apple juice, caramel, stewed pears, light aroma of hazelnuts too. Luscious fruit syrup, perfect balance between apple and pear, the right mild amount of caramelized or strewed fruits, and also the acidity is delicate and perfectly balanced.
Delicious.

UPDATED: JUN 3, 2012 Golden-brown colour with plenty of legs. Woodsy, earthy aroma with a mix of figgy dark fruits and apricotty bright ones...a little molasses in there as well. More complex aroma than the Neige but perhaps less enticing. The flavour on the other hand...oh shit...toasty, woodsy flavours with soft brown sugar, dashes of malic acid, rich clean fruit and the strong suggestion of nutmeg. Exquisite. Recent vintages have a lot of lychee aroma.

(Bottle, 2005 vintage, 1068/3466) Pours a clear sparkling golden body with nice legs. Aroma of apple, apricot, honey, and pineapple. Flavor of concentrated apple, apricot, and light florals. Nice acidity and sweetness balance. I wish this was more easily accessible.
