COMMERCIAL DESCRIPTION
In the fall, very ripe apples are hand picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by NATURAL CRYOCONCENTRATION. After few days of intense cold, concentrated must, representing 1/5 of the initial quantity of juice, is collected by gravity. The must is then placed in OAK barrels where it ferments for at least eight months at low temperatures. Raised on lees for 4 months in barrels, it was then assembled and bottled.

Sampled thanks to Andrew for these the great ciders. Lots of red apple. Nose isn’t quite as good as the flavor. More apples in the flavor sweet tart fruity.. Sweeter sugarry but good. A lot sweeter than the premier. 7/4/8/4/16

Bottle - Reserve 2009 - Cooked sweet nice apples. Clear orange. Very nice, rich sweet cooked apples with almost no acidity. Balanced well and very pleasant.

Rating #8000. Nose brings out toffee, caramelized apples, and bready apple pie. Flavour is wonderfully complex, with notes of caramelized apples, toffee, bready notes, and light oak. Very silky, viscous and warming. Everything is in perfect proportion. The complexity is through the roof. Certainly an elegant ice cider.

Puh, can it go better than this? Lovely yellow flavour, cinnamon, sweet pink candy. At the backend, a modest acidity. This is well made, great product. The mouthfeel at his best. Ice cider to be king!

>> Pours deep fire iridium amber with thick alcohol legs and dense viscosity. Nose is salted caramel apple, apple strudel, freshly baked apple pie. Taste brings dark cherry, tart green apple, and mild spicy alcohol along with that playoff of salt, sour, sugar, and tannin. Not syrupy sweet, more like biting into more apple strudel or apple danish but the apples inside are fresh and still have a crunch. Mild tannin balance. This one is a knockout as expected.

Bottle @ Mondial des Cidres de Glace 2015. Light amber colored pour with sticky legs. Juicy stone fruit and apple on the nose. Great caramel, some maple, and tons of vanilla. Slight oak, some fruit skins, and pear. The flavor is just super juicy and fruity. Great acidity as well. Sweet vanilla, caramel, and a hint of maple. Another very well done product from La Face Cachée de la Pomme.

2006 vintage. Smells like a whole lotta apples and a pinch of ground cloves in one glass. Clear brownish tint. Taste is so good. So much apple. I want to bake with this stuff.

2006 Reserva enjoyed with Tommy and others.

A - Dark orange almost a bronze gold. Nice alcohol legs, flat obviously.

S - Has a huge fruity apple and pear with a little bit of clove and prune. Nose is pretty huge with lots of fruit

T - Wow. There is a ton of flavor in this one. It has an almost rotten apple finish. up front I get blueberry, apple, honeysuckle and just loads and loads of apple.

M - Thick, viscous and oily. coats every aspect of the tongue and leaves a lot of sweetness

O - This is a very unique cider. I’d love to get more!

bottle - This golden amber cider has an extra rich, ripe apple aroma. It tastes very sweet with a sharp, tart apple bite and some brown apple undertones. It puts me in mind of very sweet red delicious apples and once gain this cidery delivers a superb cider.

Clear deep golden orange beer, sticky in the glass, "tears running down". Aroma: very intense, ripe sweet fresh apple juice, bit sugary. MF: full body. Taste: very sweet and sugary, bit sour from the apples, sugary and sweet apple juice, bit lemony, overall sweetness. Aftertaste: sticky sweet, sugary apple juice, some alcohol, apple peel, bit of cooked apple sauce.
