Bottle for our anniversary celebration. Pours orange and still. Aroma is sweet apples and plenty of skins. Can sense the acidity just from the smell. Taste brings a more balanced taste than typical ice ciders, some astringency from the skins used. A bit of alcohol burn on the tongue and acidity. Finish is sour apples, a bit of alcohol. God, this stuff is amazing.

bottle - This cider has a robust aroma of sweet apples with a hint of florals. The taste is very sweet and full, yet tart, bursting with ripe apples and the suggestion of honey. The sweetness carries through to the finish. It’s definitely more of a dessert drink, a very delicious dessert. Superb!

Thanks to Patrick767 for sharing this bottle. I do not have a lot of experience with ciders. This one was still and straw colored. Deep apple peel nose with something spicey. Flavors of apples (d’uh), some spice and lots of apple peels. I get something bitter that I can’t put my finger on. Tastey but I think I prefer meads...

2007 bottle, pours a clear light honey gold. Nose is super light and bright. Crisp pear, apple, floral. Not as caramel-focused as some heavier apple ice wine. Mouth is uniquely tart, light acidity on the back. Sour and long, some heat. Of course all tart apple and pear. Nice stuff, beautiful nose especially.

Drank at the Mondial des cidres de glace SAQ 2011, February 12, 2011. Hazy yellow, good trace. Aroma of apple juice with notes of yeast, slightly sweet. Taste of apple juice slightly alcoholized, tart but creamy, tart jelly aftertaste. Rather unique and interesting!

Pouring at Le Mondial des Cidres Glaces. Pours a clear gold. Anise and winter spices, toast, wood, and tart apple skins warming. Smooth and full of caramel. Warming alcohol makes a quick appearance as well before heading into a smooth finish with some light yeasty esters. Very interesting.

Pale golden pour. The nose is very intense. Lots of dried apple skin. A touch of soft tannic character. Lightly spicy with soft clove notes and dried cinnamon. Sweet finish with a lovely fruity character. More tannic than the regular Neige. A bit of bready character on the palate. Long drying finish. Mmmm - another winner.
