Laissez-vous tenter par «Le Fruit Défendu», un cidre de glace artisanal élaboré à partir de la récolte automnale de diverses variétés de pommes tardives telles la Mc Intosh, la Spartan et l’Empire. Mûries à point, les pommes sont pressurées sous les grands froids de l’hiver québécois. Un long processus de fermentation à basse température suivi de soins particuliers des artisans propriétaires permettent à ce cidre liquoreux de révéler ses arômes fleuris et fruités.

2oz sample from bottle. Deep amber gold pour, clear. Aroma is nice and fruity, very ripe apple, rich caramel notes, light spice. Taste is spicy, nice cinnamon, lots of caramel, ripe apple. Palate is rich, sweet, full bodied. Good stuff.

sample from 2009 vintage. pours medium dark golden, red-pink tint, with some nice legs. spicy red apples, gently caramelized, strawberry/raspberry coulis, warming alcohol, berry seed astringency, their light acidity, sweetness 9ofcourse) - demerara and mable syrup along berry coulis; pepper, minerals. flat carbonation of course, medium body - oily; sweet, gently tart and astringent herbal-peppery-spicy finish. apparent oxidized notes - but never overwhelming or completely undesired. unique berry-oriented ice cider. very nice stuff.

Vintage 2009. Un cidre bien doré avec de courtes jambes. Dans ce nez peu explosif, j’y trouve: miel et pommes au caramel, pointe piquante (épices ou agrumes ou les deux?). Au niveau du goût, bonne présence sucrée des fruits avec une acidité légèrement décalée. En bouche, le liquide est légèrement liquoreux. En arrière-goût, présence d’un sucre chaud.

2 oz sample from bottle (375 ml) at home. 2009 harvest. Deep golden orange leaving some nice sticky legs on the glass. Before looking at the deScription, I wasn’t sure if this was a cryoconcentrated or cryoextracted ice cider because it’s more on ripe apples and brown sugar than your usual cryoconcentrated ice cider, but lighter than your usual cryoextracted one. Along ripe apple and brown sugar there’s some mild to moderate spiciness along a tiny bit of oxidation notes, caramel and herbal notes. Taste is moderately sweet and moderately acidic with a nice ripe apples presence, brown sugar, moderate spiciness (cinnamon mostly) and again some oxidation notes that aren’t unpleasant. Medium body. Still. Oily mouthfeel. Ripe apples finish with some sweet quickly cut by acidity. A gentle warmth also takes place at the very end of each sip. This ice cider was a pleasant surprise. Not mindblowing on any aspect, but a pretty neat product. Nice!

Bottle @ Mondial des Cidres de Glace 2015. Orange tinted golden pour. Slightly syrupy nose. Lots of brown sugar and caramel sauce. Stewed apple, slight fruit skin, and honey. Flavor is certainly sweet, but does have a nice hint of acidity. More honey and brown sugar than anything. But good apple flavor, sweetness, and acidity.

2013-02-22 - tasting hosted by blankboy, with gregclow, jercraigs and mabel - 375ml clear corked bottle c/o J&K. Lovely and unexpected coppery gold, bright, refractive, a bit oily-looking, nice legs, not much head. Aroma of ripe apple, with skins, hint of white wine - not overly alcoholic (8+). Simple taste - apple, ripe, a touch sour but also a bit sweet, like many, it made me think of baked alaska somewhat. Light body, slick, slightly boozy mouthfeel, finishes quickly and simple - I would like a touch more acidity and complexity, but a solid drinker nonetheless.

2013-02-22. Dark golden amber body, syrupy legs. 3+ Musty fruity apple, notes of skins, hints at caramel and brown sugar. 7++ Flavour is quite sweet, sugary, fruity, bit of musty apple. Syrupy smooth full bodied palate. Simple and has a bit less balancing acidity than some others - but no sooner do I type that then the next sip gains a bunch of acidity. Enjoyable, quite pleasant. Lovely aroma of sweet apples and a hint of honey. Flavour’s the same, lots of sweet apples along with a hint of honey and some light floral notes. Medium bodied, syrupy mouthfeel. Very nice stuff.

Bottle. Pours amber with a thin head. Sweet fresh apple aroma, with spices and a hint of honey. The flavor has fresh red apples, caramel, a hint of honey and brown sugar, and just a touch of fresh apple tartness. Really good, but just a touch too sweet to be truly great.
