(05.17.06) One pint 9.4 oz green bottle from DiCarlo’s, Mundelein, IL. 8.4% ABV. Unfiltered, unpasteurized, bottle conditioned. Poured hazy orange with large white head. Some white particulates. Soft carbonation. Fruity sweet malt aroma. Medium bodied tripel that starts with light malt sweetness and intense fruity spicy flavors. Some sharpness (carbonation) in the mouth. Finished with light fruity and spice flavors. Yum. Smooth, rich and complex flavor character, full of fruit and spice.

Pours a clear, pale straw yellow with plenty of streaming bubbles that form very little head. Aroma suggests grassy hops and some candy sugar. Odd bubble-gum flavor with some spicy but not particularly bitter hops. Thin, bubbly palate. Why folks serve otherwise bottle-conditioned beers out of standard kegs is a mystery to me. For that matter, it’s also a mystery why brewers that should know better put keg versions of their bottle-conditioned beers on the market. My guess is this beer would have been much, much better served in bottle form.

Big banana nose. Hazy, chicken soup color with a gritty head. Cool tap handle. Drier than the aroma would suggest. A bit briney, strange phenols whisper "Silly Putty". Mercifully quick, pasty finish with some fruit. Drink cold.

In short: An amazingly drinkable smooth yeasty blonde ale. Fluffy a bit wild with milky fruity notes. Far from intense but oh so satisfying.
How: Bottle 750ml, about 6 months old.
The look: Cloudy golden body with lots of yeast particles and a medium white head
In long: Amazing yeast profile. Fluffy body, meringue, light grapefruit, whip cream, some bananas, some ice cream. Light tartness. Something “wild” about the beer, not funky but still wilder than most Saisons. Very little hops presence. No alcohol at all, drinks itself like a 5% witbier. Parts of it remind me of their Estivalle on steroids without the hops of the Estivalle. This is not an intense beer, it is a very smooth, subtle and extremely pleasant beer. Don’t expect a classic tripel, this is a different beast. After trying their excelletn Rulles Estivale I was expecting the Cadillac of Abbey Tripels but ended-up getting a custom Rolls-Royce instead!!!

This hazy gold color triple, has sweet spicy flavors and a floral aroma. It has a long lasting head. The nice bitter finish is just right. Good good tripel.

A great unfiltered Belgian triple with exceptional low-key character. Great color. A little tame compared to other triples, but still excellent. Great nose with subtle floral notes with hints of fruit and herbs. Great yeast sediments (when there’s stuff floating around inside it tells me it’s going to be aromatic and complex – this one is just what you might expect from an artisanal brasserie).

Sampled at the mondial de la bière de Montréal 2006. Nice tripple. golden color. Nice flowers aroma. Nice finish, a bit fruity and bitter. Great.

Hazy yellow hue, with a frothy white head, with good lacing, yeasty, bready dough nose, with citrus fruits fruitiness, hint of spiciness and a faint floral hops in the aroma follows through on a medium-bodied palate with a yeasty, zesty citrus fruits accent of lemons, grapefruits, pale malt, hint of floral hops, leading towards a lingering floral hops bitterness finish.
