Draught at ’t Klooster, Delft, 2,5 years old. Pours cloudy copper with a thick long lasting beige head. Aroma is caramel, wood, grapes, fruits, toast, floral and malts. Heavy sweet and light bitter. Barrel aging really smoothened this out and it’s my favourite of the bunch so far. Full bodied with soft carbonation. Very good!

Corked bottle. dark amber color. White wine aroma (Sauternes?) Just hints of oak, nothing more. Malty sweet, vinous and alcoholic flavor. More alcoholic as less oak as #5, but has the same vinous intensity.

Bottle - corked and caged 375mL. K18C11 11:11 Batch 6. Murky ruby/copper pour with a tall, foamy tan head. Leaves delicate lacing over the glass. Sweet malt, dark fruit, caramel, soft wood and custard/dessert notes in the aroma. Taste is big wood notes, caramel, dark fruits, soft yeast notes, creamy malt, light custard, soft sponge cake and faint vanilla. Body is medium with a soft, dense, bubbly carbonation. Finishes with more dark fruit notes, big wood flavors, light vanilla, custard, caramel and sweet malt. Delicious!

bottle. Pours a muddy brown with a tan head. Nose is of bubblegum and raisins. Taste is of raisins. Not very complex, but still tasty. Mouthfeel is medium and tingly with alcohol noticeable.

Opens without a sound but pours with plenty of carbonation producing a fast head that rises and falls to a pancake that sticks. Smells of mineral, sweet malt and dried fruit. Full nectar with mild carbonation. A very malt forward brew with mild acidity. Sweetness on the tongue with nuances of dried fruit and butterscotch. The barrels are very noticeable creating a nice alternate to the usual quad.

375ml bottle, has been cellared since release. Aroma of sweet, dried fruit (apricot, golden raisin) and oak, with touches of white wine, light brown sugar, spicy, doughy, estery yeast, clove, pineapple and light but apparent alcohol. Deep, dark amber-brown in color, hazy and lightly sedimented (I made an effort to leave the dregs in the bottle this time), with a fine, lasting, uneven head. Flavor profile is similarly full of oak, lightly sugary sweetness and tropical fruit with winey touches here and there, peppery alcohol and a certain candyish, praline tone in the background. Finish shows some Calvados character(?). Hefty, smooth and lightly warming on the palate, body is full enough. I certainly decided to splurge a bit on this stuff and I enjoyed it.
