COMMERCIAL DESCRIPTION
BATCH 7 is blended in June 2011 and is the first batch (of two) that has matured in old whiskey barrels. These barrels come from different whiskey distilleries such as Bowmore, Tamdhu, Strathspey and Laphroaig (Johnstons). The aroma’s of the whiskeys have an obvious impact on the final flavor. This flavor is remarkable and clearly different from those of previous batches. Peat and burnt are more present, while wood and wood tannins are less obvious to spot. But the warming effect of the full, robust flavor the whiskey barrels passed on to our already beautiful Quadrupel, makes this batch maybe even the most tasty brewed to date.

Bottle. Thanks GEus. Pours clear dark red to black with a small, light fizzy off-white head. Aroma has clear peat, caramel, plums, raisins. Medium to low carbonation, fine dry and quite creamy mouthfeel. Flavour has sweet whiskey, oak dryness, caramel, light peaty smoke that kinda grows. Good lingering oaky dryness. Mellow.

375 ml bottle at home. Pours cloudy dark copper amber with no head, no carbonation. Deep nutty and toffee alike aromas, little bit of wet cardboard as well, alcohol already coming through... Medium body, flat as can be, a tad watery, taste is bland, like whisky with lots of water, little smoke at the end. Expected it to hold a bit up longer (3 years old).

Bottle, shared by Ferris. Dark reddish amber with literally no head. Cooked peaches, caramel and faint peat. Barely any detectable peat here, and just a ghost of a quad.

Bottle - Whisky, peat and some sweet stone fruit. Pretty clear copper with no head. Woody, peaty, stone fruit Great peaty beer, very light and easy drinking. A bit disappointing for a quad.

12.7 ounce bottle poured into a La Trappe chalice. Pours a murky brown witha thin whisp of a beige head of foam. The aroma is peaty, woody, boozy, and has nuances of dark ripe fruits. The taste is boozy and sweet. Thick mouthfeel and low carbonation.

(La Trappe Quadrupel Oak Aged Batch #7) Bottle 375 ml, corked and caged poured into a small goblet at home. ABV 10% Amber brown colour on the body, some bubbles on the surface that disappear quickly, of course no use talking of retention or lacing on the glass. Aroma is of vanilla, alcohol, wood, whiskey. Taste also of wood, ash, some coal, caramel, whiskey, vanilla but lighter than the aroma. Medium thin body, low and watery carbonation. Overall a good batch but it misses that "wow, what a beer!" feeling of other batches. Maybe the weakest one I’ve tried.

Questa birra è stata fatta maturare un botti dove precedentemente vi era del whiskey. Il risultato è un incrocio tra una dolce e corposa quadrupel e del buon whiskey. Mi rendo conto che è una birra particolare e che a non tutti può piacere. Per me è decisamente una delle mie preferite e consiglio a tutti di provarla.

(Bottle) Hazy brown colour with brief, thin foam. Malty, fruity, peaty nose with Scottish whisky, oak wood, raisins, prunes and hints of saffron. Malty, fruity, peaty taste with notes of oak wood, brown sugar, treacle, raisins, prunes, peaty whisky, dark bread, chocolate and a fairly sweet finish with low bitterness and lots of oak and smoke. Almost full body, quite sweet. Low carbonation makes it a bit flat. I’ve tried better oak aged versions, this one was a bit over-powered by whisky and oak. Still, quite nice.

Refrigerated 12.7 oz. brown bottle corked and capped poured into a Trappist glass. Pours dark brown with clumps of yeast and small beige head. Aroma is nice whisky, medium body, low carbonation, and some small bubble lacing. Taste is whiskey, oak, peat, and long stale finish. Batch #3 was way better compared to this. $20 bottle worth $2.

375ml cork and caged bottle poured into an old Berliner Weisse bowl during the mass ’good beer on-line tasting evening’ on 3rd Dec 13. Oh my, this is good: might look a bit iffy and dirty but it smells and tastes awesome. The nose is wonderful, the whiskey notes from whatever barrels this was aged in have matured and give the aroma a magnificent malt spirit and peat, smell. Port like with a semi-burnt nature too. The taste is divine: whiskey, port and peat flavours vie with each other to excite your taste buds with their own characteristics, which have actually blended together to produce a beer of note. Really impressed, as I have been with batches 3 and 8 before this one. The alcohol is never fare from the surface, but the depth of flavours keep it in check. A lovely crafted beer.

375mL bottle, pours a murky amber brown with no head. Nose brings out loads of peat whiskey, rich dark fruits and caramel - very complex. Flavour brings out even more peat whiskey than on the nose, which blends well with the dark fruits and caramel. Could use a livelier carbonation, as this is nearly flat. I’m going against the grain here - I like the mix of the peat and base quad - though not as much as base quad. Great stuff.
