33cL bottle. Poured golden color with a quickly dissipating white head. Yeast noted throughout the aroma and flavor possibly due to the sediment in the bottle being easily stirred. Fine beer though.

thnx to pierre Pours dark , fuzzy blonde, good white head , very very soft From bottle Smell is grainy, bit bitter Taste is unexpectedly good . very, soft, some grains, some hops . All very ( and i mean extremely ) balanced and soft . Rediculously tastefull and soft ( yes, i’ll keep saying that ! ) Very nice ! And perfect carbonation ;)

Bottle from Etre Gourmet. Clear golden beer with a rich lasting white head. Fruity floral aroma, roses, citrus, peach, grapes, plums, some oranges, yeasty, banana notes. Fruity flavor, citrus, grapes, peach, floral, sweetish, warming alcohol, spicy notes. Really drinkable beer.

Bière brassée par Achouffe pour Detrembleur à Grand Halleux près de Vielsalm, d’où le nom de Vieille Salme. La Salme étant la rivière, je ne sais pas si la vieille était réellement une sorcière, comme sur l’étiquette, mais cette recette est strictement diabolique. Couleur doré foncé brillant. Apparence avec des matières en suspension, exactement comme dans la marmite des sorcières !!! Bulles fines partout dans le verre mais à montée lente, un peu comme si elles calculaient qui elles allaient manger …. Mousse blanc beige bien crémeuse de type abbaye... Arômes de blé, épice fine, zeste d’orange, houblon fin, aubépine, chèvrefeuille. 1ère bouche au volume soyeux, assez orientée sur l’épice fraîche et la pelure d’orange. Arrière-bouche pleine mais fraîche et fleurie. 2ème bouche avec une belle épice forestière concoctée par les fées de la grande forêt ardennaise. 3ème bouche où on développe les grandes saveurs des fleurs blanches et des épices secrètes. Arrière-bouche très construite. La longueur enchaîne (sans jeu de mots sorciers ou jeu sorcier de mots !!) les saveurs en beauté, bref la belle et la bête... La levure est fine, parfaite, lisse, tendre. L’alcool de la marmite offre une très belle progression et un niveau vraiment intéressant (8,3 % abv). La finale est de grande ampleur et superbes saveurs. Conclusion : très grande bière, que je ne classerais pas personnellement en «belgian strong ale » comme le site, mais plutôt en « spéciale belge forte », ce qui pour les spécialistes n’a rien à voir avec l’autre catégorie, mais nous sommes dans les discussions d’expert... Nous dirons donc très grande spéciale, avec énormément de qualités et des saveurs de niche très spécifiques. Une bière à part, dans le genre fleuri / épicé. Superbe bière ou décoction de l’herbe aux sorcières, à vous de décider... Moi je prends...

Bottle at some bar in Vielsalm. Pours cloudy golden with a lacy white head. Aroma is ripe fruits, hay, yeast and floral. Taste is moderate sweet. Not too complicated but good balance. Medium bodied and quite fizzy.

33cl Bottle: BBD 11 Jan 14, poured into it’s own chalice at home on 16 Nov 13. Brought this home with me a couple of years ago along with two glasses from a mini European beery tour. No sediment left the bottle so I got a deep golden/amber body that was clear and clean, on top a deep white blanket of foam. Yeasty nose with spice and fruity esters, almost sweet, yet also semi-moldy in aroma. The taste was also a lovely mixture of flavours, sweet, yet alcoholic and yeasty. This is my sort of brew, full of character and different, an individual that demands attention and is worthy of pontification. Sure you can feel the alcohol, but that adds to this beers charm, it’s complicated and simple all at the same time, well worth finding.

33 cl. bottle @ home. Procured @ Willems. BBF 08/08/2014. Apparently brewed by Achouffe but I have never seen this one before which is interesting because with the Moortgat distribution these days the Chouffe beers have really wide distribution. Golden, big creamy white head. Nose is citrus, lots of hops actually, light banana, sweet yeast, light esters & lively hops. Taste is banana, very creamy feel, white bread sweet, esters, hefty dose of EU hops resulting into medicinal hop taste, bitter esters, light booze & white pepper, grass, quite a bit of citrus, grain, medicinal booze note is quite off-putting but overall nice. Creamy. Not bad at all.
