Pours an ebony body topped by a light brown foamy head that last. Aroma of chocolate, coffey, roasted malt with vanilla and licorice hints. Sweet mouthfeel with sparkling waves on tastebuds. Nice taste of dry chocolate, combined with lacose notes and some licorice and vanilla elements. Nicely done.

On tap at the brewpub. Pours an opaque black with no head except for a really thin veil and a small rim that leaves good lacing. Nose is of chocolate, coffee and burnt malt. Taste is lightly sweet with lots of roasted malt but (hopefully) close to no ash. Alcohol goes unnoticed. Body is full, carbonation moderate and mouthfeel just smooth. Overall a pretty good one, one of their best for sure!

Bottle (500 ml). Bottled on October 20th 2011, so 3+ years old. Forgotten way too long in the cellar.

Appearance: Black with a medium slowly diminishing brown head and little lacing.

Aroma: Despite the age, the coffee is still quite present along with floral notes, chocolate and light anise that might have faded a bit with, which is a good thing.

Taste: Taste has a lot less coffee and chocolate than aroma while the anise is more present and the floral aspect is about the same. The age is starting to show with light oxidation notes. There’s still some bitterness too. Not very sweet.

Palate: Medium body. Medium carbonation (there’s a lot of bubbles, but they are weak... not sure I’m explaining it the right way though). Mouthfeel is probably the part of the beer that show the most signs of age as it started to watered down. Lingering anise finish that I really don’t like.

Overall: It’s still a decent beer after 3+ years. Alcohol is well hidden. The balance is interesting too, with the notable exception the lingering anise finish. Tasty. If you still have bottles from that batch, open them as soon as possible... they definitely won’t get any better.

500ml bottle poured into a duvel glass around 8 degrees: Pours an beautiful opaque black robe letting no light through so carbonation can only be guessed. The eggshell head is about a finger and a half, two fingers high and shows a coarse structure and good retention. Lacing is also coarse and beautiful to watch. The nose is insane with tons of sweet dark chocolate, nuts and alcohol. The hops add a subtle floral aspect way in the back and you have to smell the beer a few times to spot it. On the tongue, the brew is devilish with rich dark chocolate and espresso once again paring up with the subtle hops which propel the vapory finish to the back of the mouth. The density is just right for the style, not too heavy but it remains a sipper. This beer would pair really well with decadent chocolate desserts.

Dark brown in colour with a long lasting large beige head, excellent lacing. 500ml bottle purchased at La Trappe a Fromage in Gatineau, Quebec. Aroma is of milk chocolate, cocoa, some light dark fruits, icing sugar. Flavour is a little on the lighter side of imperial stouts, lots of sweetness, soft, light roasted malts, some noticeable alcohol, creamy and quite smooth. Smooth, sweet mouthfeel, medium/light body, moderate carbonation. Finishes a little thin, roasty, long. A lighter imperial stout but still has wonderful flavour. Once you get over the fact that this isn’t an over-the-top-in-your-face imperial its quite enjoyable.

Emb. Avril 2011. Chocolat. Sucré. Caramel. Fruit mûre. Banane. Anis. Peu d'amertume, autant au niveau du houblon que de torréfaction. Stout dessert.

(Bouteille 500ml, presque 4 ans d’âge - gardée selon la prescription de la bouteille qui lui donne une espérance de vie de 5 ans) - Bière noire aux reflets rubis, bien mousseuse. Le nez d’origine, plutôt café / anisé selon mes souvenirs, s’exprime désormais sous un jour un peu plus madérisé / caramélisé. En bouche, l’alcool n’a pas perdu de sa fougue, mais ce sont les saveurs chocolatées, de moka et de pain rôti qui prédominent. Une acidité modérée ainsi qu’une faible amertume sont aussi perceptibles. La bière n’a pas autant de corps qu’escompté, mais le facteur goût sauve la donne. Au bilan, voilà 500ml qui ont passé trop vite.

En fût au brouepub de Québec. Couleur noire avec des reflets rougeâtres, mousse moka. Arôme de malt torréfié, vanille, boisé? Goût de malt torréfié, chocolat, alcool. Carbonation moyenne-faible, corps dense.

Bottle shared by brew3crew. Pours brown in color with a huge beige head. The aroma has powdery chocolate, what I can only describe as dusty malts, mild sweetness, some dark fruits. The flavor is more powdery, dusty chocolate, dark fruits, mild roast, fairly thin for an imperial stout. I was surprised that this is 10%.

Taste on tap at the brewpub in Chicoutimi. Aroma: Basic chocolate and coffee with notes of dates. Appearance: Black, with small rocky head, long lasting, with good lacing. Taste: All chocolate with a bit of coffee and black licorice. Chocolate is black and bitter. Roasting notes are well established. A real stout with a good sugar base. Well balanced between sugar and roasted. Texture is between watery and oily, body medium. No great stout but a good one.
