Pours an ebony body topped by a light brown foamy head that last. Aroma of chocolate, coffey, roasted malt with vanilla and licorice hints. Sweet mouthfeel with sparkling waves on tastebuds. Nice taste of dry chocolate, combined with lacose notes and some licorice and vanilla elements. Nicely done.

Noire, avec un mince col de mousse moka. Nez de torréfaction, floral, d’anis et un petit quelque chose qui me fait penser au rhum. Goût de mélasse, de grains brûlés, de cacao, de fumé, de petits fruits noirs et d’alcool. Onctueux en bouche et une légère amertume venant de la torréfaction.

Off black body with a dense light tan head. Nose features roasted malt, sweet chocolate and a hint of ripe dark berries. This is a really nice, complex and balanced IS, with wide taste profile emerging as the beer moves towards room temperature. Taste profile features sweet chocolate, cream, roasted caramel malts, some coffee, nice balancing hops, blackberries and nuts. Tastes are well integrated and the booziness is in balance. Likin’ it. Who are these guys?

Can - Dark chocolate, roast, dark fruit and some grains. Deep jet black with a small beige head. Dark bitter chocolate and a long malty bitter finish. Not bad but a bit too bitter in the finish.

473ml can. Black pour, red hues and a frothy tan head. Flavors are roasted cereals, chocolate, coffee, licorice, caramel, alcohol and ashes with fruity and herbal notes. Medium to full body, soft carbonation, creamy texture.

(Canette 9,5 %) Bière noire aux reflets rubis à la lumière, bonne opacité, effervescence difficile à observer mais qui semble faible, et surmontée d’un col brunâtre plutôt étroit mais bien dense et collant, et qui s’estompe tranquillement. Arômes de malt torréfié, café, grain brûlé, subtil sucré (mélasse et/ou chocolat noir, cacao…) avec une bonne dose de fumée, cendres, léger boisé, légère vanille, notes alcoolisées et terreuses. Par moment, on décèle quelques effluves fruités (bleuet, raisin rouge, cerise noire…). Nez agréable et intéressant, bonne intensité, belle complexité. En bouche, pétillement faible, presque inexistant sur la langue, mais onctuosité élevée au palais, c’est riche, soyeux, velouté, liquoreux… Au goût, malt torréfié, on est surtout dans le café, voire expresso, et le grain brûlé, la bière est peu sucré, on note seulement quelques nuances chocolatées et de mélasse. Saveurs également de cendres, fumée, léger boisé à tendance charbon de bois, vanille, anis, alcool subtil significativement moins présent qu’au nez. Goût aussi fruité, surtout bleuet et raisin rouge, ça fait un peu «jus de raisin» par moment. La canette mentionne des flaveurs de violette, et c’est vrai que le fruité a des tendances florales par moment, houblon floral, finale à l’amertume moyennement élevée. Excellente intégration des différentes saveurs entre elles, très bon goût tout de même assez original pour une stout impériale, complexité élevée, intensité en bouche moyenne-bonne. Je pense qu’on peut aisément trouver mieux pour le style sur le marché québécois, mais ça reste tout de même une très bonne bière.

Can 473ml. Thx Czar. Pours very dark brown/black with medium-high beige head. Good lacing. Aroma is of roasted malt, chocolate, coffee. Taste is of roasted malt, chocolate, bitterness, alcohol, slight ashes, sugar, fruits, licorice. Palate: Full bodied. Soft-medium carbonation. Warming alcohol. Overall: Rich. Complex. Heavy. Well crafted.

UPDATED: OCT 15, 2015 Canette datée du 11/09/15, bue après 1 mois. Robe noire opaque surmonté d’un très mince col de mousse brunâtre. Ce dernier disparaît rapidement pour ne laisser qu’un mince cerne. Une dentelle moyennement lisse qui laisse présager un liquide onctueux sans être trop épais. Arômes de malt torréfié, bois noirci, grains de café, chocolat noir bien amer et des pointes de fruits confits et vanille. En bouche, plutôt amer et beaucoup de saveurs de torréfaction. Bois braisé, malt torréfié, café, chocolat noir. Le côté plus fruité et sucré perçu au nez est plus subtil mais tout de même perceptible. Une finale qui laisse l’alcool se démarquer, peut-être un peu trop, et qui crée une sensation de sécheresse sur le palais. La texture est un peu mince pour une imperial stout mais cette lacune est partiellement compensée par un corps bien rond. Très bon produit au-dessus de la moyenne.

On tap at the brewpub. Pours an opaque black with no head except for a really thin veil and a small rim that leaves good lacing. Nose is of chocolate, coffee and burnt malt. Taste is lightly sweet with lots of roasted malt but (hopefully) close to no ash. Alcohol goes unnoticed. Body is full, carbonation moderate and mouthfeel just smooth. Overall a pretty good one, one of their best for sure!

Bottle (500 ml). Bottled on October 20th 2011, so 3+ years old. Forgotten way too long in the cellar.

Appearance: Black with a medium slowly diminishing brown head and little lacing.

Aroma: Despite the age, the coffee is still quite present along with floral notes, chocolate and light anise that might have faded a bit with, which is a good thing.

Taste: Taste has a lot less coffee and chocolate than aroma while the anise is more present and the floral aspect is about the same. The age is starting to show with light oxidation notes. There’s still some bitterness too. Not very sweet.

Palate: Medium body. Medium carbonation (there’s a lot of bubbles, but they are weak... not sure I’m explaining it the right way though). Mouthfeel is probably the part of the beer that show the most signs of age as it started to watered down. Lingering anise finish that I really don’t like.

Overall: It’s still a decent beer after 3+ years. Alcohol is well hidden. The balance is interesting too, with the notable exception the lingering anise finish. Tasty. If you still have bottles from that batch, open them as soon as possible... they definitely won’t get any better.

Beardbeerman (284) - Montreal, Quebec, CANADA - DEC 28, 2014
500ml bottle poured into a duvel glass around 8 degrees: Pours an beautiful opaque black robe letting no light through so carbonation can only be guessed. The eggshell head is about a finger and a half, two fingers high and shows a coarse structure and good retention. Lacing is also coarse and beautiful to watch. The nose is insane with tons of sweet dark chocolate, nuts and alcohol. The hops add a subtle floral aspect way in the back and you have to smell the beer a few times to spot it. On the tongue, the brew is devilish with rich dark chocolate and espresso once again paring up with the subtle hops which propel the vapory finish to the back of the mouth. The density is just right for the style, not too heavy but it remains a sipper. This beer would pair really well with decadent chocolate desserts.
