Poured clear and yellow/gold with a thin, white head (Taco Mac always pours drafts with no head and too cold...). The aroma is spicy with some banana notes - quite floral, too. The phenolics and noble hops remind me of a potpourri - almost like chamomile and lavendar... There is also a slight pepperiness in there. The flavor is nice - bready with a little residual malt sweetness, lots of fruity esters (subtle banana note), yeast (accentuates the breadiness), and delicate backup of floral/perfumy hops. The middle of the tongue picks up more esters, and the beer finishes a bit full (probably too full compared to Belgian Saisons) with a nice, balancing bitterness. The mouthfeel is crisply carbonated and medium in body. Overall, a very tasty Belgain ale - but not quite dry enough (same mistake I made the last time I tried to homebrew a Saison...) Smell: Aroma of pale malts, candied lemon peel, and a few flecks of toffee with now more than a hint of Grains of Paradise.
Taste: Pale malts and a dash of lemon with the sweetness and spice coming in simultaneously. A hint of yeast, but it really lacks the singularly unique characteristics found in Belgian yeast strains. Very light hop bitterness for the finish.
Mouthfeel: Medium-thin body. Medium carbonation.
