This year’s Dogfather Imperial Stout will all be aged in charred bourbon barrels. Seven malt varieties and subtle hop additions give it a complex flavor profile.

UPDATED: DEC 29, 2011 Bottle. The pour was a thick dark black with a huge (3-4 finger) medium brown creamy head that lasted a good long while letting the thick lacing sheet the glass rather nicely. The aroma was of a burnt dark bread malt, a mild resin hop and a sweet leathery yeast with notes of coffee, molasses, and dark chocolate with a mild alcohol tinge. It tasted slightly bitter and a bit malty with a strong coffee overtone in the beginning and then moved to a moderately bitter-sweet flavor with a smooth chocolate coffee finish that had a mild alcohol undertone at the end. The flavor lasted a nice long while letting the mocha coffee flavor settle nicely on the taste buds. Mouthfeel was thick and full in body with the texture being very smooth and creamy and having a soft carbonation. Overall a GREAT Stout that was so well balanced with tons of flavor that you hardly noticed the high alcohol content. In one word “YUM”.

The aroma is malt, coffee, chocolate and roasty. Pours black with medium brown head, fully diminishing and good lacing. The taste is bitter. The body is full, the texture creamy a touch watery, the carbonation lively and the finish bitter, Overall Very good.

From 22oz bottle to snifter. Pour is a rich black color with a thick tan head. Nose is huge roasted malt, wood, smokey, caramel. Taste is heavy bodied, sour with sweetness coming in at times. Silky mouthfeel, pleasant. Great imperial

Great 2 finger brown head.. nice lacing.. the brew is expected black. The head lasts for not too long.. but the lace is perfect. Aroma is thick coffee and cocoa.. leaning much more toward the french roast side... subtle.. very subtle fruity esters.. lite prune. This brew is clean .. dark malts... maybe some caramel... not getting much in the way of hops.. but it is still pretty complex just with the malt bill. I noticed out of the gates on the flavor that there are some dark dried cherry fruity esters.. Roasted malts with quite a bit of coffee and a little chocolate.. but surprisingly very little char.. very drinkable... hops are there.. but only for balance.. a background of citric hops.. maybe some spiciness.. but I could easily be mistaken. Body is medium for the style and the carbonation may be a touch lite.. but the drinkability is definitely there.

Appearance: clear deep brown with a fat finger of dense tan head, decent retention and minimal lacing. (3/5) Aroma: slightly harsh whiskey, dark fruit, dark chocolate, brown sugar. (7/10) Taste: moderately strong sweet, moderately strong bitter. (7/10) Palate: full body, low carbonation, lingering hot and bitter finish. (4/5) Big and boozy, even for an imperial stout, and not perfectly done - yeah, I’m definitely getting the bourbon barrel, but it could be smoother. There’s an edge to the aroma that initially comes across as solvent... which, I guess, alcohol is. Not a complete washout, mind you - and it improves as it warms up... and as you warm up... (14/20)

Pours a clear dark brown with a good sized beige head. This beer is actually pretty light and clear for an imperial stout. Aromas of dark fruit, raisins, malts and brown sugar. Smells dark. Very strong, dense flavor. Chocolate, molasses and a bit of coffee. A bit of an alcohol flavor, which isn’t surprising given the ABV, but is a bit too bad nonetheless. If you want an imperial stout with a lot of flavor (in a good way) this is a good one to try.

Black pour with cocoa colored creamy head. Lots of flavors going on in this- fruits (berries), some oak, faint bourbon, bit of smoke, almost a lactose type sweetness. Mouth feel is slick, oily. Thought, and wanted it to be chewy. I’m not a fan. The flavors don’t meld together well enough.

UPDATED: FEB 15, 2015 Black, very black beer with a one finger high head. Nose: Chocolate, roasted malt, dried fruit, plum, vanilla, bourbon and oatmeal. Taste: Spices, licorice, brown sugar, molasses, wood, fudge, coffee, vanilla raisin and ash. Body: Full body, smooth. High carbonation. Complex and rich - Really good!

Bomber: Thanks Blazay: Split in two: Served in a Chouffe glass at roomtemperature: Black beer with a mocha brown head. Aromas of oatmeal, loquorice, herbal roast, vinous, sweet bay leaf, cookies, cloves an for some reason I have to think about dog food... Flavours of spices like cloves, bay leaf and rosemary, roast, liquorice, bitters, malt roast, bread/rye, some sweetwood/liquorice wood and prunes. Aftertaste is a mix of bitters, liquorice, spices and some prunes. Low carbo, light watery mouthfeel, close to full bodied.
