Inpired by Napolean Bonaparte. The Irish and French were Allies during the period when Napolean was in power. French has a small brewing culture but their independence and culture is worthy of great respect. This ale is based around our house French saison blend. It features mostly pale and wheat malts and a hefty dose of sugar to dry this big boy out. Hopped and dry hopped with massive amounts of Cascade, Columbus, Centennial and Chinook hops to double IPA levels. So...is it a Tripel IPA? Hoppy saison, a new style? Who knows and more importantly, who cares. Beers like this don’t deserve to be put into tiny boxes. Bottles in 1 L ’Grolsch’ style, flip top bottles.

Malts - Pale, Honey malt, Wheat and cane sugar
Hops - a blend of Columbus, Centennial, Cascade and Chinook

750 ml bottle shared by Dan P. Color shows a cloudy yellow with lasting head retention. Aroma is fruity and yeasty. Peaches, mangos and bread.

Flavor has a wheat and honey upfront with a chewy yeasty texture through the center. Hints of rye and sugar. I like the flavors here but it displays a hug slap of booze in the finish. I’m not kidding, alcohol burn down the gullet after the sip. If I had a bottle I would sit on it awhile and see if it can mellow. I liked the flavor if I could have gotten around the burn. Damn that’s hot!

Really outstanding nose. Caramel, cider, brandy. Big barleywine mouthfeel and kick. Sicky sweet. Syrupy. Gingerbread. I like it, but it is a sipper. Got in Erie at Wegman’s.

From a bottle poured an amber color with a small amount of head. Strong malty flavor with a lingering finish.

DocLock (7700) - Lower Pottsgrove, Pennsylvania, USA - SEP 19, 2013
Bottle from Wegman’s. Pours unfiltered dark straw toward coppery with small off-white somewhat fizzy head head. Nose is floral hops, mild tartness, malt. The taste is mildly funky, floral, with some hops, pale malt, and citric finishing flavors.

Bottle from wegmans. Pours hazy orange with minimal head. The aroma is not pungent but has some sweet citrus and light floral notes. The taste has some bitterness, orange peel, dry bitter finish. Interesting.

love the fact that the 11.5% ABV if virtually undetectable. There is a little bit of a Belgian sweetness toward the middle. Hops show up at the finish along with a fizzy bite...

Cloudy orange, tiny head. Nose is orange/mango juice, pith, yeast, some clay, berries, alcohol. Flavor is orange, honey, alcohol. Big and fruity. Cloying for sure but nice in small quantities.

Bottle from Wegmans Williamsport. Pours yellow with a huge amount of white foam. Not a ton on the nose but alcohol. Lots of pineapple on the tongue with a fair amount of bitterness on the finish. Hides the alcohol well but it lacks balance.

Bottle. Pours a slightly cloudy dark gold body with a rather large and active frothy white head that took forever to settle due to the vigorous carbonation level. The nose is fairly funky smelling, a good amount of rustic farmhouse character under a moderate hoppy note. A little yeastiness, a touch of alcohol, straw, and wheat. The flavor isn’t all that hoppy though, especially as it is being billed as such. More pale doughy malt, sweetness, and some spicy notes from both the rye and the yeast. The alcohol is surprisingly well hidden thankfully, you can hardly tell this is over 10%, I would have probably guessed 7 or so. A little more residual sweetness than I care for personally, but it’s not terrible. Comes across as closest to a Belgian Triple more than anything as far as style goes. Fairly heavy on the tongue with a clingy finish. Moderate soft carbonation. Not bad, but nothing that I would seek out for a second go-around.
