We started with loads of roasted, black patent, caramel and other specialty malts, added over two gallons of dark VT maple syrup per bbl. then carefully aged this beauty in a freshly emptied American Oak bourbon barrel. Rich and decadent by nature, this beer will continue to mature and improve for many months. Cellar aging at 50-55F is recommended! Bottled in January 2011. 11% alc./vol.

2012 12oz bottle. Heavily roasted dark malts. Underlying sweetness. Slight maple and bourbon but the roasted malts really dominate in this one. Carbonation seemed a bit high for the style and abv.

Bottle. Oily, syrupy, abyssal black. This is menacing. A sticky, half-finger head the color of cinnamon rises from the depths slowly. Chocolatey nose. Milk chocolate, chocolate syrup, cocoa nibs. A little oak, some red wine grape and barrel notes. Lots of alcohol as well. Malted chocolate spiked with vanilla vodka in the flavor. A hint of green apple, fruity oak. Very grape-heavy. A little too fruity and alcoholic. Maybe some maple, and vanilla, too. The body is medium, not as heavy as expected, but fairly oily. Mild, tingly carbonation. A good amount of tongue-numbing alcohol. Good aroma; nice chocolate notes; a lovely ouch of maple. Just too boozy -- it detracts from the other flavors.

Bouteille 375 mL. Fall 2012. Noire avec une mousse qui s’estompe rapidement. Nez de cacao, grains torréfiés et bourbon. La bouche semble un peu moins complexe que la version régulière. L’érable s’estompe un peu au profil du bourbon et on ressent une légère astringence due à la barrique. Excellente.

"they’ll end up scoring the same, but i’d pick the base beer 6-7 times out of ten over this one. Classic case of gaining delicious bourbony goodness and losing complexity. Depends what you are in the mood for. The aroma of this beer is fantastic. The maple is still subtle, and the bourbon, while not hot, overpowers many of the subtleties that made the base stout so good. this beer still rocks, just in a different way. the bourbon used reminded me of dark intrique."

Bottle thanks to Nick. Pours a dark brown with beige head that lasts. The aroma is bourbon, maple, caramel, and wood. Thin mouthfeel with rich chocolate malt, light maple, sweet boozy finish. Very good.

Bottle... This beer rocks!... Pours black with a small, creamy, off-white head. The aroma is a fantastic yet simple marriage of bourbon and fudge. Full-bodied and silky with modest carbonation. The flavor is bursting-at-the-seams with roasty-burnt malts, pouch tobacco, fudge and toasted nuts. Leans toward the bitter side of balance, but not by much. Finishes roasty and moderately bitter. Thanks goes out to ctipping for popping the top on this bottle of world class brew!

Pour is pretty close to black with a two-finger-wide tan head. Aroma is huge on the bourbon with notes of vanilla and oak in the background. Flavor is pretty boozy upfront with maple, dark chocolate, and roasted malts pushed to the back.

Bottled Fall 2012, Utopias/Knob Creek barrels, red wax 375 ml bottle into a snifter at around cellar temperature. Pours a dark black with a finger of light mocha foam. Decent lacing and a swirl generates a red hue to the mocha foam ala some Russian Imperial Stouts. Aroma is just unreal here. Spot on chocolate malted milk balls. That sort of dry cocoa powder/chalkiness element. Light roast and some smooth vanilla and oak. Lingering maple sweetness into a light alcohol warmth. Taste is again that malted milk ball element, cocoa powder and milk chocolate. Roast, lots of vanilla, and maple sugar cookies. Very dessert like but it’s all kept in check with a robust roastiness that is ever so slightly savory. This tastes like a maple flavored malted milk ball and I love it. The only issue is a lingering sugar/anise thing on the aftertaste that detracts a bit. Mouth feel is medium bodied and slightly creamy, maybe a bit thinner then most stouts yet still full enough for the flavor profile. A very unique and delicious beer. I can’t even imagine what the maple bourbon barrel version is like. This is an upper tier stout for sure.

Pour out of bottle, thick oily black pour with dark brown head, aroma brought notes of lots of bourbon, oak, vanilla, maple syrup comes through, nice dark chocolate, caramel, notes in there, very slight roast and coffee come through as well. Taste is a mix of big dark chocolate, caramel, into lots of bourbon, vanilla, and maple syrup, hints of coconut, slight roast, finishing very sweet. Tasty!
