A not very convincing slim white sheet of foam sits above the cloudy dulled down terracota. Heavily malty and yeasty nose from which I get, albeit with no overly agressive sugary intrusion, a danish pastries impression. The honeyed, glazed moist and filling bread sensation together with the date/raisin dried fruit component whose soft acidity is a welcome balancing force. Hops in here are neglectable, but add a gently spicy and noble kick to the finish, complemented by perhaps a bit forced, biting carbonation. Forgetting any preconceived notions about Dubbels is probably the best way to approach that one as in terms of texture, colour and esters, it’s not quite the same spectrum of flavours. Still, it boasts a solid identity, a convincing malt base and a solid sense of balance. I don’t find myself carried away by its charms, but I feel it’s been rated on the severe side.

Arômes de sucre d’érable et de baies confites. Très doux en bouche avec un goût de cassonade et d’érable. Un peu de bleuets et pommes. Les houblons sortent en finale et donne un touche amère.

660 Ml Bottle. hazy light caramel color, high head but quick evaporation. Carbonation is not very high. This smells like christmas! at first you smell the belgian yeast and the sugar that would most likely come from dates and figs. After you may smell the Malt presence as a backbone in the aromas. the taste is a bit more shy than expected. I taste buiscuit malts, quickly followed by the dates sugar and dark fruits. The alcohol is not very well hidden but for a winter beer that shouldn’t a be a flaw. not really spicy to tell you the truth... yeah.. Truly, I expected more of this beer but it’s not bad at all. it is what they advertise and it is still worth checking ! cheers!

Castor Winter Dubbel 7% Bottle. It pours a lovely amber brown with a creamy beige head. A big bready malt aroma with light stone fruit notes. The beer is medium bodied with a remarkably satisfying mouthfeel. The taste is malty sweet, a bit of Belgian yeasty funk, fruity, a touch boozy, plums, candy, wine like, a touch of spice. Pretty good.

660 ml bottle bought at local IGA grocery A: red fruits, caramel, light licorice. App: hazy dark copper no head. T/p: medium body with medium long sweet finish. Soft carbonation o: OK. Has that Belgian malty character but palate is off.

Bouteille de 660 ml achetée chez Veux-tu une Bière? (Montréal, QC). Arôme: Odeur de caramel avec une pointe de petits fruits. Apparence: La couleur est dorée-cuivrée avec une très faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût de raisins secs et de caramel avec une pointe d’épices. Durée moyenne l’arrière goût. Palette: Le corps est moyen avec une texture légèrement onctueuse. Moyenne effervescence en bouche. Légère présence de raisins secs en arrière goût. (Rating #5920)

660ml bottle, slight hazy copper-amber hue, with a pillowy beige head, with a fruity yeast, light sweet sugar cane, dark dried fruit nose, with some faint grape bubblegum, raisin pie, light toasted, caramel, roasted malt, date square notes, with a faint raisin granola bar, spicy, faint brown chocolate, brown sugar accent in the aroma follows through on a medium-bodied palate with a yeasty, fruity dried raisin, raisin pie, faint sweet earthy toasted, caramel, biscuity malty character, with some toffee, bran muffin, mild flowery leafy hop, brown sugar flavours, leading towards a yeasty, dried raisin fruitiness, toasted, biscuity maltiness, faint lingering leafy hop bitterness finish.

Pours a dark copper color. Very thin head that quickly disperses. Pours with an audible hiss from the carbonation. No lacing left behind. Aromas of cinnamon and cooked apples. Hints of mint. On the palate, it tastes of apple skins, and spices. Overall, it is a nice blend of spice box and fruit. This is very much in the vein of a "Christmas Beer".
