COMMERCIAL DESCRIPTION
Our Saison Blanche with Brett added. Saison Blanche is a wheat based saison, fairly hopped with Saaz and Amarillo (28 IBU) and lightly spiced with an intriguing blend of traditionnal wheat beer spices and some more unusual east indian gems. It is then dry-hopped with more Amarillo while refermenting with brettanomyces. 3 months later it is now a complex brew, refreshing, intriguing, with a mellow brett character coming trough nicely in the mix. Releases will be made on several occasion during the next months to enjoy this constantly evoluting beer. Natural carbonation. 6,1% alc./vol. 2011: This year Saison Blanche is the same recipe but fermented with a blend of saison yeasts and brettanomyces. Release in june. 6,9% alc./ vol.

In short: A muddy, doughy and moderately bretty Saison. A far from perfect example of a style I love.
How: Tap at brewpub, Night Of The Funk event
The look: Cloudy blonde body topped by a medium white head
In long: Nose is moderately bretty with pineapples, leather and grapefruits notes. Body is a bit heavy and yeasty. Feels like a yeast soup. Taste is cereals, grapefruit skin, dough, leather, yeast. The body is a bit heavy, the beer doesn’t feel very bretty but the finish is still very dry. I give it a good rating because I’m a Brett and Saison maniac but in all honestly this is not a very good example of the style. A bit muddy, not clean enough. The fact that I give it a good rating just goes on to say how much I enjoy Saison and Brett combination. The only combination that I enjoy more than Brett + Saison is Google Earth + coordinates of nudist beaches.

Une pinte sur place. La couleur de cette bière est jaune claire, elle est trouble et elle ne semble pas avoir de mousse. Le nez est frais, une touche d’acidité est perceptible provenant du blé, touche de brett mais si je ne l’avais pas su je ne l’aurais pas senti. En bouche elle se boit tout seul, elle est très fraiche et une légère amertume est bien agréable en fin de bouche.

On tap at Mondial 2011.Big foamy head on a yellow body, lacey. So-so drinkability, medium mouthfeel. Substantial licorice taste, one dimensional.

UPDATED: APR 26, 2011 Draft. Pours hazy golden body with an off white head. Dry brett and leather tones, hints of citrus and orange peel. Grapefruit and bitter spicy bread y body with a faint spiced pepper note. Pretty good saison.

Tap Brewpub. Light peppery nose, light citrus, with some very light funk. Flavor is dominated by the citrus, and light pepperiness of the saison, and honestly the brett is tough to find. A nice saison, but in my opinion the brett didnt do much.

Tap at Mondial. Pours a hazed dull peach with strange large bubble soda head. Aroma is crackery doughy, protein goop wheat mash, cream of wheat, some light tropical fruitiness, but otherwise extremely low brett character. Flavor is orange lemon zest, some toast, light caramel hint, herbal, grassy, lots of wheat, get slight horsey funk which becomes astringent and leathery, wire-like, plastic and slight dog hair/dander. Ashy dry finish with some tobacco leaf?

Cloudy yellow-browny white head, good retention. Aroma has lots of funky notes with wheat, citrus and tartness. Flavor is wheat, spices, rye, funkiness, moderate tartness, spices, herbal hops and an herbal, bitter finish.

Draught at Le Cheval Blanc. Pours a hazy golden-orange with an average sized lasting creamy white head. Aroma is slightly sweet and yeasty along with some fruit and a good amount of spices and herbs. Flavour of yeast, herbs & spices, citrus and light hops -- very nice and easy to drink. Average bodied. Fantastic stuff.

On draught at Le Cheval Blanc April 23, 2010. Fantastic-looking pour, thick murky amber-yellow with a thick lasting average-sized white head. Sweet spicy/yeasty aroma, really bold, I got ginger and some alcohol too: smelled fattening, FFS! The taste follows - a shifting, lively melange of ginger, yeast, sweet fruity malt, really sweet and not boozy at all; it is a tad dry, but hell this is so good. Almost a cask mouthfeel - a bit still, surprisingly only average-bodied, a bit astringent from all that spice, pungently yeasty-dry. Overall great stuff; pitchers of this, please!! A big spicy/malty sweet saison .... blowsy, sure, but get ’er motor ticking and she’ll take you for a ride, boyo!

A hazed golden saison with a thin creamy white head. A superb fruity aroma of banana esters, pleasant Brett notes, peaches and light spices. In mouth, a nicely herbal and bitter saison, with orange peels, belgian hops, wormwood. Smooth and enticing. On tap at brewpub, April 23 2010.
