(hiver 2005-06)

On tap at Cheval Blanc. The color is a dark hazy blond, with a white head. The taste and aroma is of spicies and malt. To go back to the taste it is also somewhat bitter and a bit watery.

12 oz. on tap at the brewpub. App.: med. brownish copper with a foamy, sl. off-white head. Aroma: pine and malt, maybe cardamon, a metallic defect (again) and a hard-to-define skunky quality. Palate: med.-light body, aggressive, sharp carbonation. Flav.: that piney, cardamon flavour predominates (maybe it’s more like clove?), roasted malts and subdued fruitiness, lightly sweet and not the least bit bitter. A bit spicy on the finish. Not what I expected and that makes sense now that I read the description!

Bu sur place en fut (10 oz). Blonde foncée, mince collet. Arome de malte fruité, très peu épicé. Goût d’houblon amère simplistique, faiblement épicé.

UPDATED: JAN 12, 2008 Partly cloudy light bronze body topped by off-white ring. Nose is spicy barley candies and tree bark. Original and pleasant. Taste is peppery and overall very spicy. I also get fruity flavours like I get from artificially flavoured candies. There are also a lot of earthy roots and coniferous bark flavours in there. Nice contrast with the fruity spices and it works well. Sweet finish with dry non bitter hops. The over the top spicy candy thing would probably tire me out after a while but not before a pint or two. A very nice Christmas Season (Saison de Noel). If you knew my family you’d agree that a good Christmas Season can help me get through the Christmas season.

On tap at the brewpub. The body was medium copper. The aroma had some cinnamon and ginger. There was also some caramel and shortbread. The taste was apples and ginger with some spice in the finish. Another form this brewer with a smooth slick body.

Hazy mahogany hue, with a ring of tan foam, spicy aroma of nutmeg, ginger, cinnamon, even cloves in the nose, with a hint of wininess and fruitiness in the aroma, follows through on a medium-bodied palate, with a spicy peppery like black pepper, star anise, with a hint of fruitiness, mostly dark fruits, caramelized malt note, leading towards a peppery, malty dry finish.

(Rating #377)

Pours a deep amber with a good head and nice carbonation. Nice sweet maltalong with some herbal and spicy hops. Flavor has a nice maltiness to it, and my notes say that it reminded me more of a biere de garde than a saison. A fair amount of spice upfront but then again hits you in the end, along with some earthy and herbal notes. Some notes of bourbon, oak, and other woods in there as well. Definitely a weird saison.
