Always hard to decipher a beer’s colour under Cheval Blanc’s tame reddish lighting, but this seems to be a hazy golden offering crowned by a generous frothy white foam. Under the nose, it remains tamely wild, after all, 4 months is not a long time for brettanomyces to have a deep influence. Still, its basic recipe is solid, meaning that we’re facing belgian yeastiness without overly bready aspects, but rather a table set for freshness to be the main focused. Gentle flowery notions meet hay-like dryness as timid noble hops have suffered from time and their brett exposition in mouth, leaving tropical fruits - not juicy though - and soft growing leather impressions on the agenda. Light and easy-going body sparkled with tight medium-bubbled carbonation. A very fresh and dry saison which is a fine beginning in the magnificient world of brett. Hopefully more to come.

En fût. Verre de 14 oz dégustée directement à la brasserie. Arôme: Odeur de brett avec une pointe citronnée. Apparence: La couleur est blonde légèrement voilée avec une moyenne densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de zestes de citron avec une pointe de pommes vertes. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement astringente. Forte effervescence en bouche. Finale sèche d’agrumes. (Rating #2780)

In short: A straightforward moderately bretty Saison. Very effective. For those who like the style.

The look: Cloudy golden body topped by a medium white head
In long: Nose is moderately bretty (for a so-called brett-Saison). For the average dude this is wild as hell but for the initiated this is just moderately bretty. Taste is rather simple but very effective for those you like the style. Funky, dried pineapples, grapefruits skin, some leather, crisp malts. Finish brings a medium dryness. No hops or bitterness presence to speak of. This was Cheval Blanc brewer first personal experience with Brett and he says it made him realized that enjoys it wild and wants to do that type of stuff again and again. And that last sentence taken out of context is just too cool.
