Cask at Le Cheval Blanc. Pours a slightly hazy orange-amber with a large frothy white head. Slightly mild aroma of resiny citrus hops and citrus fruit (mainly oranges) backed by caramel malt. Nice flavour, quite dry and follows the aroma, with lots of citrus hops backed by oranges, caramel malt and a long bitter finish -- does a good job of emulating a U.S. style IPA. Full bodied. Very good.

On cask at Le Cheval Blanc April 23, 2010. Slightly hazy amber with an average mottled pancake dough head (3+). Aroma of dry resin and light grapefruit pith bitterness with citrus and a juicy but not sweet malt backbone. Taste is "barely an IPA" whatever I meant by that (I was a little drunk at this point) - dry citrus, but not a huge bitterness, mid-level alcohol... simple but very drinkable. The main palate characteristics were astringency, dryness, and mild carbonation (quite appropriate for cask, of course) - a long but low-level dry pithy bitter finish; a true session IPA, not overpowering in any way, but it does have character and invites you to drink it in quantity (unlike some IPAs/DIPAs, that just fuck you up). You DO need to drink water with this puppy though - it’s that dry and acidic.

A lightly hazed golden amber IPA with a thick frothy lacing white head. In aroma, a sweet honey flower with light lavander and c-hops. In mouth, a biscuitty malt with loads of bitter hops, almost bilous, with a super oily mouthfeel, some residual butterscotch. Unbalanced. On tap at brewpub, April 23, 2010.

On cask at Le Cheval Blanc. Appearance: Slightly cloudy orange with a thick white head. Aroma: lightly hopped with musky malt & paper. Flavour: lots of grass with a serious amount of hops & malt, lots of caramel & nuts. Long bitter finish. Nice b

Drank on cask (20 oz) at the brewpub, April 18, 2010. Honey copper, average head. Aroma of mid-dry hops and floral, slightly bitter. Taste of dry hops, some grains, very bitter, the bitterness dominates the aftertaste. An other over bitter IPA from them!

My Bottom Line:
Fruity hops and their resins develop lots of herbal spiciness to diversify this India Pale Ale’s somewhat linear caramel malts.

Further Personal Perceptions:
-A sturdy sheet of foam covers the dark amber.
-The hop bitterness is levelled; same intensity as in the aroma and flavor profile.
-The cask renders a nice soft roundness.
-The fruity character is mostly citrusy.

On cask at the brewpub.

In short: A full bodied fruity/orangy refreshing IPA.
How: Tap + cask at brewpub
The look: Cloudy dark orange body topped by a persistent small white head
In long: The hoppy hose is tangy. Taste is cake malts, caramel, oranges, some citrus fruits, a little acidity, mild astringency, medium bitterness. Long finish. The beer is halfway between refreshing and nourishing. A good warrior, someone who dies for his country. A great warrior, someone who makes someone else die for his.
