Light light unclear light to medium yellow orange color with a average, frothy - fizzy, fair lacing, fully diminishing, off-white head. Aroma is moderate apple, applesauce - apple pie. Flavor is moderate to light light heavy sweet with a average duration. Body is medium, texture is oily, carbonation is flat. [20100910]

Corked bottle from Le Comptoir du Terroir, Paris; vintage 2008, 2 years old
Hazy deep blond color; huge foam, reducing quickly; nice fine perlage, sustaining a thin head. Nice aroma of apples, apple skins, wood; it’s also citrusy, some magnesia. Dry cider, as promised; it has a good apple flavor, with a wood touch, and a good level of acidity; it has a light astringency, less than other French ciders, but enough to give it some character. Very good.

Pours a deepish golden. A big white head rises, then fizzes away quickly. A whole bunch of bubbles speeding towards the now bare surface of the liquid. Wonderful aroma. Lots of barnyard, ripe apples (red ones), oak, thyme and strawberries. Very lively mouthfeel. Flavour is wonderfully tart, not as dry as other French sidres, lots of apples, oak and well-balanced herbalness. A really fresh and good sidre.

750mL 2011 c&c from Whole Foods in Bend, OR. Cork shoots up opening unwinding the cage. Pours a low haze, deeper golden with fizzing out white soda foam. Nose is excellent Norman terroir with starfruit, apricot, heavier phenols, fresh Bosc pear. Taste is probably not super fresh so it is a overly dry and tannic instead of bright and juicy. Still, the palate is not stale, papery, or oxidized. Heavy effervescence explodes in the mouth with Bosc pear, apricot, and starfruit. Really there is no substitute for real Normandie cidre.
