In short: An oaky, rich and complex big stout/porter. Very good.
How: Tap at at Hivernale Des Brasseurs 2012
The look: Black body topped by a beige ring of foam
In long: Nose is “dark stuff” with black liquorice, molasses, chocolate and such. Taste is also a lot of “dark stuff” with molasses, vanilla extract, black liquorice, chocolate cake, raisins. Oily thick mouthfeel. Strong oak presence add a mouth-drying astringency. Very little in terms of hops presence. Light alcohol presence. The oak help to dry things up because otherwise this would have been quite heavy. A very good winter warmer of a beer. My first beer from Trèfle Noir and I can’t wait to try more. This was my first Trèfle Noir beer enjoyed at my first Hivernale Des Brasseurs beer fest, and with so many new breweries and new beer festivals around town, ratebeer is now the easiest video game I have ever played.

Appearance : Pitch black with small head.
Aroma : Rich roasted malt with chocolate and coffee. Big hops. Notes of figs and raisins.
Taste : Bog roasted malt with big chocolate. Resinous hops. Dry and slightly woody.
Palate : Thick body.
Overall : Not that much wood but it was noticeable and added a little something. Great roasted malt, great finish. Complex and well balanced. Nice hops too. Great beer.

On tap at Winter Warmer: Poured a pitch-black color stout with a nice dark brown foamy head. Aroma of intense roasted malt with nice black chocolate notes makes this a very appealing beer. Taste is a solid match between some black chocolate notes with some roasted malt with are somewhat dry but also offset some of the sweetness. Body is full with a nice creamy smooth texture and some good carbonation with no apparent alcohol. Very well brewed and something I would like to have access to on a regular basis.

Apparence: La couleur est noire opaque. Saveur: Léger goût de chocolat et de café avec une pointe de caramel. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avce une texture légèrement onctueuse. Faible effervescence en bouche. Légère présence de chocolat en arrière goût. (Rating #4161)

My Bottom Line:
Gorgeously malty, but never heavy, this Imperial Stout lays out chocolate, vanilla, roast, coffee, raisin and oak flavors in an organized and polished manner.

Further Personal Perceptions:
-A slice of foam covers the blackness.
-Mouthfeel is tight and silky. A true pleasure, perfect to showcase the many malt facets.
-Oak-aging is not overdone, adding a delicate layer of complexity.
-A light alcohol lick warms up the finish.
-Hops are there to support the flavor profile, but torrefied malts lead this show.

Drank at the 2012 Winter Warmer Montreal, on February 25. Black, medium head. Aroma of chocolate, herbs and sweet orange. Bitter taste of chocolate, roasted barley malt, good bitterness with a touch of alcohol. This is beer made ​​me a good impression, another reason to go to Abitibi!
