Nice coffee and black chocolate aroma with a touch of vanilla, caramel and sugar cane, reminding me brownies or fudge. What an exceptional nose. Constant with this brewery. Appearance: Pitch black and opaque. Head is half creamy and half rocky, sticking to glass and leaving a nice lacing. Taste: Attack is smooth and mellow with accents of coffee, chocolate and fudge coming back accompanied by notes of vanilla and caramel. Roasted and hops bitternesses are completing each other marvelously. Balance is perfect. Palate is mellow and round with a long lasting bitter finish. One of the best stout that I’ve tasted up to date.

On tap at La Foire Gourmande in Ville Marie Quebec. Black pour, with a huge mocha head. The thick roasted aroma is great, notes of coffee, cocoa, and touches of soy. The mouthfeel is great, a touch thick from the oatmeal, and the carb is perfect. the finish is again, very rich and intense with the roasted malts. More coffee, even espresso. Bitter cocoa, and soy. Great stout.

upfront big roasty notes, some light lactic notes, and some subtle sweeetnss that turns into cocoa, and coffee. Carbonation was low, but the mouth feel was spot on. intense roastiness in the finish with a big dose bitter cocoa, and some coffee. a great stout.

UPDATED: FEB 10, 2013 Bouteille 500 ml. 5.8%.

A dense tan tower of foam settles above the blackness. Charred grains dominate the aroma in which mellow coffee, burnt bread and soft dark and red fruit notes make agreeable appearances. Smooth mouth entrance, its carbonation is flowing, very soft and amplifying the round texture. Very pleasant mouthfeel, round yet not heavy and sweet, but never syrupy and balanced by a hefty roastiness that dries the palate out. At the same time, the hops feel strikingly fresh for a stout, leaving a tea-like, herbal and resinous impression in the finish, but never being anywhere near abusive., the bitterness being apparently evenly shared by the malts and hops. Excellent balanced, once again by Trèfle Noir. Impressive, the drinkability of a 4.5% stout, but the body of a small impy.

Bottle 500ml. Pours black with high creamy brown head. Intense lacing. Aroma is of sweet, roasted malt, coffee, chocolate. Taste is of sweet, roasted malt, coffee, chocolate, sligth acidity. Overall: I like the reasonable Abv, combined with the tastiness of the beer.

UPDATED: AUG 4, 2012 My Bottom Line:
Frank roasted cereals and underlying caramel sweetness team up with blueberry skin esters and wooden hop resins to build this well-fed and überdrinkable Stout.

Further Personal Perceptions:
-A veil of foam covers the browned blackness.
-The roasted malts offer both bitterness and crunchy cereal flavors.
-As with all Trèfle Noir beers, the body is well rounded and the carbonation relaxed enough to let us appreciate all the flavors thoroughly.
-Hops are more expressive than average, expressing resins which are harmonious with the grain bill.
-A coffee cream touch seems to coat the flavor profile’s dominant aspects.

Bottle and on tap at the brewpub.
