COMMERCIAL DESCRIPTION
It is a skillful blend, 40% of which is brewed in Buteuse Brassin Special, Dulcis Succubus and Bretteuse barrels, 40% is from sour rye aged in Banyuls barrels and 20% of which is from young Saison beer. The nose is evocative of a Flanders red, with slightly acidic notes of cherry. The palate is sharp, dry and slightly oxidized, leaving a sweet, fruity taste on the tongue which is immediately followed by a vinous finish reminiscent of great classical beers.

Des arômes acidulés et vineux; des notes de pommettes, de cuir, de petits fruits sures. Le visuel est ambré, très flou, plein de particules. La mousse est assez épaisse, bien tenue et elle laisse de belles traces sur le verre. Le gustatif est très acidulé avec la pommette, le cuir et la groseille qui reviennent avec une finale légèrement salée. Les levures sauvages et les bretts sont très actifs; mais elle reste néanmoins dans la norme de ce type de bière. Très bon, mais rien d’exceptionnel.

Dorée aux reflets cuivrés, la mousse ne tient pas du tout en place. La complexité du bouquet est absolument intrigante, il se passe tout plein de choses en même temps et c’est merveilleux. C’est sauvage (cuir, écurie), c’est fruité (petits fruits rouges) et c’est végétal. Tout ça en même temps. On ne parvient pas vraiment à déchiffrer le tout en bouche, mais on s’y plaît assurément. Les fruits rouges sont toujours présents et l’acidité est prenante. La finale est vinaigrée et assez longue. Les mots ne suffisent pas pour décrire à quel point cette bière est spectaculaire.

RBAG - I think shared by Tony. Golden, fizzy stuff. Nice tart lemon aroma. Taste is lots of white grape juice, dry wine. Interesting stuff. Might have stood out more on its own.

750ml bottle. Slow gusher. Hazy amber with a frothy white head. Flavors are wood, leather, peach, usual TDD funky barnyard characteristics, resinous hops, lemon, apples, vinegar, wine and floral notes. Light to medium body, lively carbonation, smooth texture.
