COMMERCIAL DESCRIPTION
THIS PAGE IS FOR THE BOTTLED VERSION (aged in Syrah barrels). Une IPA vieillie 18 mois en barriques de Syrah californien envahies de brettanomyces. Il en résulte une bière trouble aux accents orangés dont le nez évoque l’eau de rose, le pamplemousse, la vanille et le cuir. En bouche, l’acidité et l’amertume s’engagent dans une longue valse nuptiale, véritable mariage des saveurs qui ne demande qu’à être consommé.

Billed as an IPA and closer to that than to the usual wild/sour. Orange peel hops with rose blossom and lots of Brett, wood coming in. Brett heavy in the flavor, a slight touch of honey. There’s this orange thing that comes through strong and balances out all of the brett in a way that makes me wonder why we aren’t seeing more Brett IPAs. The hops are holding strong after 18 months in the barrel.

This one came out of nowhere (for me, at least) to take the night against a very fine lineup of other (mostly wild, sour) beers.

Bottle, thanks to mcberko. Pale amber, white head. Really lovely aroma: orange blossom, rose water. Fruity, bretty, delicious aroma. Vanilla (thanks commercial description and broken French -- then vanilla and rose were hard to articulate). Caramel, toast. Taste: good and bretty. Herbal as well. Surprisingly complex, delicate, and delicious. Moderately bitter, dry finish. Alcohol present. Herbal, earthy, fruity. Damn, this is fucking great. Want moar.

Visual: Pours deep copper brown with a magnificent ultra-creamy lasting head, superb sticky lacing, a thick layer of retention plus lots and lots of clustered streams. Awesome. Nose: light barnyard with very woody pressed apple cider. Very clean nose. (lvl-8)-pungency Attack: crisp, tingly fizzy Mid-palate: full-bodied, (lvl-5)-sweetness, light-sour + med tangy, (MAIN) super woody, orange peel, caramel malts, pressed apple juice, vanilla, mild alcohol detection Finish: yeasty, grapefruit bitter hops and pulp, lingering woody malt hopped finish. Summary: Excellent complexity, moderately palate-heavy. Great flavours going on; good with a meal. One-and-done solo beer.

Orange oxydé, assez trouble et ne moussant que très peu, le bouquet vivifiant de cette bière avec ses houblons fruités et résineux et son aspect sauvage promet une expérience inoubliable et c’est le cas. En bouche, c’est à la fois très fruité, gracieuseté des houblons et du vieillissement en barriques de vin rouge, et funky à cause des bretts. D’une facilité déconcertante à boire, j’aimerais avoir une bouteille pour moi tout seul la prochaine fois. Moi aussi je suis sauvage des fois!

Bottle. Orange amber with a clumping foam. Aroma is a melange of IPA and Brett. Starts out delicate on the tip of tongue and then pounces on the middle. Back end is full of subtle notes; malt, Brett, citrus, wood and spice. Has a bit of roughness to it in the aftertaste, almost chewy.

Hazy copper pour with white head and great lacing. Aroma is grapefruit, brettanomyces, tart grapes. Flavour has a great mix of all elements of the nose with a funky, dry, bitter finish. Tasty.

Cloudy reddish orange beer, creamy yellowish head, pretty stable, bit adhesive. Aroma: artificial brett aroma, pleasant sourness, fruity, tangerines. MF: ok carbon, medium body. Taste: artificial brett, bit sour, pretty bitter and dry. Aftertaste: bitter, grapefruit, bit of artifical brett yeast, some lemon rind. Why always using that same brett yeast package people? You want wild yeast? Go collect it outdoors.

75cl bottle sample@ZBF 2014-ZA, courtesy of, apparently, tom10101 (in absentia). "Bière sauvage/bière forte". Pours a murky orange with vestigal foam at edges. Apple & orange blossom, floral aroma merges into a tart and dry tripel/saison with prepared citrus rind as its core ester reference; some bready yeast characteristics. Very nice stuff and much more natural drinking than many a US saison.
