Bottled sample via Savvy1982, shared with oakbluff. Apricot in colour with medium carbonation. Quite floral on the nose, with notes of hop jelly, orchard fruit, wine barrel, and spice. Flavours are of smooth pale malts, round "spirit" notes, more barrel, sweet apple, faint savory cheese. Nice savory vs. lactic balance on the palate. Classy stuff. I’d be interested to try it in another year to see what else the brett does to it.

Bottle at RBJG 2 Grand Tasting, thanks MartinT. Amber colour with a white head. Some lacing. Mild sour spicy aroma. Strong flavour, fruity, slightly sour, spicy orange.

Bottle, thanks to Poperinge! Pours clear amber, with a medium off-white head, great lacing! Nose is apples, yeast, brett, oak, vanilla, toast. Flavors are oak, brandy, green apple, Gds, there is so much here... Very bold and exceptionally balanced. Delicious!

(bottle shared at RSRIZZO’s winter gathering on 1/10/10; bottle from a trade w/ Presario). Cloudy dark copper color. Large off white head, which is mostly diminishing. Yeasty, earthy aroma, with light oak. Strong earthy flavor with light oak. Avg duration. Smooth finish. Slick texture. Moderate/fizzy carbonation. Spare lacing.

Aroma is light gueuze notes mixed with malt. Has a nice foggy brown body with little head. Flavour is gueuze-like with a dry malt finish. The palate is dry; the body could be more solid, but I’m nitpicking as this is good stuff.

750ml bottle...can’t believe I have to travel to Calgary to get this but such is life - at least I got to try it. That being said I didn’t actually know what the expect and the lacto/tartness that was quite ripe completely threw me off - then I found out it had brett and things began to make sense. Amber with an off white head. Grains, brett, alcohol and apples (brandy), a cutting sweetness that I can’t quite identify but similar to a chardonnay and oak. Combination of lacto, tart and sweetness on the palate - very unbalanced to begin with but once it had 30 minutes to breath things began to meld much better - carbonation was a bit high in my opinion, full bodied. Very very dry finish, some spice, tart and brandy. An interesting beer - not quite sure how I feel about it - would like to have another bottle to sit on fir a bit and see how it does with another 6 months.

Courtesy Beerlando. Gold. White carbonation. Awesome fruity, funky brett presence, subtle tannic oak, lightly spicy, very dry. Medium body, well carbonated yet smooth. Awesome brew.

UPDATED: NOV 5, 2011 (*Cuvée 2011) Beaucoup d’attente pour cette version vieillie de la Buteuse. Dès le départ, le liquide veut surgir de la bouteille et en la respirant, on comprend pourquoi. Le Brett sur un fond de brandy annonce une complexité presqu’abominable. Je prends une bonne respiration et je me lance...ouch! L’excitation de savoir que j’ai 3 bouteilles dans le celliers s’empare de moi. Tout le long la vanille ne s’essouffle pas et appuie le touffu bouquet de saveur. C’est presque gras comme présence en bouche avec une finale poivrée, florale et juste assez funky. Une tonne de brandy boisé brule le fond de la gorge sans que je n’ai, une seconde, même pensé me plaindre.

RBJG2. Light golden colour, small white head. Aroma is funky, sour cream, white pepper. Taste is nice sweet, caramel, hint of booze. Easy drinking. Boozy finish. Toffee. Pretty nice and quite different. I am very much into these trou de diable beers.

Bottle (Thx travlr!). Pours hazy orange with an off-white head. Flavor is lemony, yeast, sweet fruits, brandy, light hops. Finishes tart and smooth. Very good.
