2011-02-19. Crisp golden amber body with a foamy beige head. 4+ Dusty sour aroma, bit of floral yeasty character. 7+ Flavour is less sour than expected from the aroma. Bit dry, pleasant bitterness, dry grassy hops, just a moderate tangy sourness in the finish, but it lingers and builds as you go. Mild oak character comes out as it warms. I hadn’t even identified it as oak at first but once someone commented it actually slowly built in both the flavour and aroma to a point where it was a touch distracting. Interesting to know how much of that was the beer developing as it warmed versus mental suggestion. Average plus bodied palate suits the beer. Pretty nice. For my own tastes a bit more funk and a bit less oak would be even better. Bottle at Volo, Toronto

UPDATED: MAY 10, 2012 Half pint of very well behaved saison using Brett and wine barrel of Dolce Noble Rot white wine. Saison yeast. A good smooth thickish mouthfeel. Funkey, getting sugary brett taste, bitter hoppy maintains the interest.Significant malt, not significantly spicey. Very drinkable.

Bouteille de 750 ml, merci beaucoup à Dany et Marie-France ! Arômes de brettanomyces (cuir, foin), de raisins dorés confits et de miel. Robe cuivrée et relativement limpide, effervescence plutôt active et légère mousse. Très bien équilibrée et élégante en bouche, la bière montre une belle personnalité vineuse et fruitée (raisins confits, abricots). On note également un beau malt mielleux, très légèrement sucré. Les brettanomyces demeurent relativement discrets, mais contribuent une belle touche de rusticité. Finale présentant une pointe d’acidité et une légère amertume. Complexe et excellent !

UPDATED: AUG 23, 2011 My Bottom Line:
Animal, coniferous wilderness grows within this Wild Ale’s oranges, peaches and dried apricots, as honeyed grapes establish a tantalizing foundation.

Further Personal Perceptions:
-A veil of foam produces no lacing around the misty glowing amber.
-The honeyed grape character is surely a product of the botrytized wine.
-The tropical fruit salad in the nose is highly appealing.
-Prickly carbonation enlightens the honeyed fruitiness. Bigger bubbles would help the proliferation of flavors though. This is quite delicate for a Wild Ale.
-The dry finish is full of the same intricacies found in the aroma and the flavor profile.
-This is classy, complex and very drinkable; another wildly successful creation from Le Trou du Diable.
-Biscuity cereals peek through once in a while.
-Resinous hop bitterness blends into the brettanomyces finish.

Verre de dégustation, provenant d’une bouteille de 750 ml, dégusté au Winter Warmer Montréal 2010 (Montréal, QC). Arôme: Odeur de pommes vertes légèrerement acide et de vin blanc. Apparence: La couleur est blonde légèrement voilée avec une moyenne densité de bulle. Présence d’un moyen col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de raisins et de pommes vertes avce une pointe florale. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement astringente. Moyenne effervescence en bouche. Légère présence de pommes vertes en arrière goût. (Rating #3479)

bottle at the anniversary party. Clear gold pour, almost no head. Aroma of cider, apples, floral aromas, honey and oak. Taste is lightly sour, apples with soft oak flavor. Palate is lightly carbonated and full.

Appearance : Hazy pale amber with a medium creamy head.
Aroma : Nice grapes and light sourness. Horse blanket notes. Nice brett profile. Nice fruity profile.
Taste : Nice grapes with light horse blanket and light tartness. Great dry finish with notes of grapes. Some yeast too.
Overall : Very nice beer. The base saison is pretty much all gone so I don’t think it makes much sense to call this a Saison. Nice grape notes, nice brett profile. Can’t wait to get a bigger sample of this.

Re-rate 110207 750ml bottle shared by glouglouburp at TDD anniversary.
Aroma : Awesome brett and grapes with nice green and red apples notes. Light notes of bee wax.
Taste : Light brett and light grapes. Nice fruits. Finish dry grapes and light brett. Light bee wax on the finish. Light wood too.
Overall : Awesome nose. Great taste too. The bee wax become more prohiminent with time (and temp rising probably). This added a really nice complexity. Highly drinkable. Great light carbonation. Awesome stuff. Nose 8 to 9. Rest stays the same. Overall score goes from 4 to 4.1

Sampled at Winter Warmer Montreal 2011. Hazy amber with a thick white head and good retention. Aroma is very funky and lambiquesque with horse blanket, hay, pale malt, unripe gooseberries, floral hops, wood and moderate sugar. Flavor is funky with fruity notes, hay, unripe gooseberries, sour and acidic, floral notes and a dry finish. Thin to medium body with lively carbonation. This is a wonderful beer! My favorite from Winter Warmer 2011.

Aroma of lambics and gueuze, wild yeasts all over the place, all perfectly defined. Body is foggy orange with a decent level of head on top. Flavour is gueuze with white wine notes; dry finish. It tastes as Belgian as the real thing; it’s my clear favourite find from Montreal’s winter warmer fest.
