Bouteille 750 ml. Janvier 2013, Encore très réussi, bière unique en son genre, ceux qui ont la chance d’en détenir encore une sont choyés(Ou très riches ET disciplinés). C’est la troisième fois que je me paye l’occasion d’en boire une et c’est un mix parfait entre l’acidité du vin blanc et de la levure sauvage. Yo lo pierde really mon latin.

Wow! La pêche me colle au palais et m’enveloppe. Des notes sucrées d’abricots rappliquent avant de laisser place une acidité percutante, mais éphémère, qui s’estompe pour mettre en vedette du bois et du vin blanc. Lorsqu’il n’en reste pas dans mon cellier, j’angoisse. Et présentement, j’agoisse...

HOLY HELL! Copper pour, white head. Flavor is just badass. White wine grapes, light vinegar sourness, light oak flavors, funky brett notes, leather, lemons, yeast, floral and freaking delicious.

Love the Magic the Gathering like art on the bottle. Light amber pout with a light white head. Strong fruity citrus scent. Don’t think I’ve ever tasted anything like this. Fizzy on the tongue. Sweet at first then a taste that reminds me of grapes. That’s us followed by a slight IPA bitterness. Normally I don’t like this but it’s very subtle. This was well worth the price.

En dégustant la sublime Noble Rot de Dogfish Head il n’y a pas si longtemps, je me disais qu’il manquait de bière du genre au Québec. Sans dire qu’elles sont identiques, la Dulcis Succubus s’y apparente légèrement et c’est fichtrement bon! Une robe à peine voilée de couleur dorée un peu orangée permet de voir de fines bulles formant un col mousseux ample. Un bouquet fruité très vif est soutenu par des notes de miel, de bois et de cuir. Chaque effluve est différente tellement c’est complexe comme nez. La carbonatation quasi parfaite permet de distinguer chaque saveur dans chacune des gorgées. Pêche, tangerine, abricot, une valse fruitée prend d’assaut la bouche et se termine sur une douce amertume et une finale sèche de céréales. Acétique mais pas trop, je boirais cette bière à tous les jours si le budget me le permettait.

April 4, 2014. 750mL bottle at barvolo. Apricot and pineapple aromas. Lovely lacing. Golden yellow with small white head. Nicely tart with some sweetness.

Tap at Volo. Holy shit this is awesome. Pale golden pour with a very thick creamy head. The aroma is loaded with funked out bretty character. Some light pineapple, mango, and passionfruit topped by a load of dry minerally funk. Softly fruity and spicy. Loads of bright zesty character and fresh yeastiness. Lots of softly vineous tartness and soee kiwifruit as well. Great stuff that could hold it’s own against Russian River sours - incredible complexity. I needs to get to Shawinigan.

Haha a Canadian Sour, yeah i ate those words. Bottle shared by the Montreal Crew specifically not sure which one brought it but i have to imagine Dany had his hands on this, which made me wonder was this another evil joke of a beer or something special. Pours a hazy chardonnay like body with a copper tone and large full white rocky head with both good retention and lacing. The aromatic character is slow to drift through the full pillow of white head. Slowly a herbal wild grape skin tone. Chardonnay notes, this is soft and herbal with a kiss of refreshing white grape tones and and brettanomyces. Light spicy pepper y tones tickle the carbonation and your palate. A nice drying fresh finish. Super complex without being over bearing in any aspect of the beer, truly world class. Thank you for sharing.

Bottle at the mondiale 2014. Im glad i did a little snooping, they ran out of this beer on tap, but hadnt chnaged the sign indicating they now had some in bottle. I managed to snipe a look behind the counter and spot a bottle! Score! Hazy amber pour, small off white head. Aroma is loads of funk, wood, oak, vanilla, spices, and stone fruit, the body is perfect, and the carb is very low, almost flat. The finish is tangy and funky, with notes of horse blanket, stone fruit, and very tart citrus. The wood brings everything together with a leathery, oaky, vanilla glove. Very complex, and exceptional ale.
