COMMERCIAL DESCRIPTION
This imperial stout, aged in bourbon barrels, gives notes of roasted malt on a coffee, dark chocolate and caramel background. The velvety palate is sustained by a sagacious amount of alcohol warmth that give this beer the taste and feel of a fine spirit.

This is maybe the best stout I?ve ever had. Good Lord. Thanks Dominic the alehunter for this liquid gold. Pours a somewhat thin black with lots of mocha head. Aromas are creamy and milky with red berry notes. Then vanilla, and milk chocolate come through. Flavors are so damn smooth. Milk chocolate and sweet vanilla. Like drinking a candy bar. A nice boozy finish. Finishes a touch thin and effervescent for a Stout.. But the flavor and aroma profile more than make up for it.

A really interesting imperial stout. Pours a dark muddy black with a soapish beige head and tons of huge bubbles. The nose is amazing with an overlying bourbon wood note, funky fruit and yeast notes, toffee, espresso and vanilla. Smooth and silken taste with an expressed roasted malt and coffee bean note. Rich and dessert like but a tad bit watery. Overall an exceptional brew

750 ml bottle with resealable cap (happiness). Pours an orange-brown black with a resilient, cream-beige head. Smell is coffee, black chocolate. Taste is tons of chocolate, black coffee, burnt caramel, vanilla, wood, bourbon. Finish is black coffee, cocoa, somewhat light bitterness, but comes balancing all the malt quite nicely. Medium to thick body, soft, velvety mouthfeel. Weak carbonation. I feel like calling it a masterpiece. Ok, let’s go ahead and call it a masterpiece. I need more bottles of that, right freaking now! Aging time!

D’un noir bien opaque, elle semble à mi-chemin entre le mince et l’épais, avec un cercle de mousse de couleur beige ; au nez, on croit détecter des levures brett, et pratiquement rien d’autre. En bouche, elle dévoile finalement une certaine profondeur : un peu de café, de vanille, mais l’effet "brett" est toujours là (acidulé, cuir), renforcé en cela par le bourbon qui vient fermer la marche. Un Imperial Stout un peu éclectique, étrange sur les bords, qui vient jouer sur des notes peu attendues. Au total, elle est agréable, costaude et savoureuse, mais pas de la façon que l’on croyait. On lui donne le bénéfice du doute, car le résultat, volontaire ou non, est intéressant sans être impressionnant.

Noire opaque, coiffée d’une mousse beige compacte et persistante, qui se cramponne aux parois en une écume. Au nez, la mélasse semble omniprésente, alors que l’alcool est assez convainquant. On sent la cerise confite, les biscuits à l’avoine ainsi qu’une senteur de bourbon, qui ne nous envahit pas, c’est bien dosé. Un goût de caramel brûlé, de tire-éponge, de liqueur alcoolisée à la cerise. C’est bien équilibré, ça sollicite plusieurs des sens, sans agressivité et ça procure un réel plaisir en bouche. Fait à noter, elle est âgée de 14 mois. (Embouteillée 08-11) (417-211012)

Thick dark brown with a good sized beige head that leaves some lacing. Aroma is raisins, plum, vanilla, fig, subtle hint of bourbon. Medium bodied, well balanced palate. Taste is raisins, plum, fig, purple grapes, hint of oak and bourbon. Nice.

750 mL bottle at a Trou du Diable barrel-aged tasting at Volo, served in a stem glass. Pours Black with small tan head that fades quickly and leaves a trace of lace. On the nose, there are bug notes of molasses, roasted malts and chocolate along with vanilla, anise, herbs and whiskey barrel. The flavour is subtly sweet, with notes of roasted malts and bourbon barrel. The finish is long, with lingering toasty barrel notes and a touch of anise. On the palate it is medium-full in body with a syrupy texture and soft carbonation. Overall, this is a very nice barrel aged imperial stout. Very elegant and smooth, a nice brew for the fireside. 2013-05-25

jet black colour with a tan head. big roast/toast notes mixed with port/brandy sweetness in the aroma. big flavours of roast/ bitterness and a sweetness that adds balance. it is a boozy beer but super complex. nice and tasty!

Bottle, 04/01/2013. Pours black, huge foamy tan head dies down to an inviting fluffy pillow on the surface, large bubbled lacing. Aroma is dark chocolate, licorice, sweet chestnut, vanilla cake frosting with caramel and bourbon in the end. Taste is chocolate and cocoa powder, dark roast porter notes with slight coffee bitterness, bourbon prominent in the finish, a little hot but not too abrasive. Medium full palate, becomes more round with time as it was perhaps overly carbonated at first. Enjoyable, though not top notch, imperial stout for me.

750ml bottle. Very black pour with a dark tan head that lasts nicely. Bourbon really jumps out of the glass with a big roasted fire note, vanilla, espresso and licorice. On the palate the bourbon note still jumps out first with a bit of booziness. Fantastically complex stuff I’d say. It’s a little sweet and finishes with a pleasant bitterness.
