COMMERCIAL DESCRIPTION
This imperial stout, aged in bourbon barrels, gives notes of roasted malt on a coffee, dark chocolate and caramel background. The velvety palate is sustained by a sagacious amount of alcohol warmth that give this beer the taste and feel of a fine spirit.

Accents de vanille, chocolat noir et café en olfactif. Touche de cassis de caramel et de mélasse. La torréfaction est discrète mais présente. De couleur noire, à la mousse généreuse, onctueuse et au long maintient. En attaque le Bourbon est très actif; nous donnant des accents de boisé intenses et des notes céréalières, agrémentées d’un caramel enveloppant. L’amertume de torréfaction se combine aux houblons terreux aux tons de vieille branche morte. Un stout classique, beaucoup plus dans l’amertume et l’alcool que dans les sucres. Plaisant.

On tap at barVolo, Toronto. Pours black with little head. Aroma has bourbon and sweet chocolate. Bourbon flavor with cocoa and raisin. Has a spirit-like crispness to it. Fairly tasty.

Apparence : Noire, légers reflets brunâtres, énorme col brun pâle très aéré, effervescence semble moyenne à faible et lente, belle dentelle, bonne rétention du col après que la mousse initiale se soit affaissée.
Nez : Torréfaction, chocolat mi-noir, fruits séchés présents, léger baril/bois.
Goût : Bois brûlé et amertume légère dès l’entrée. Ces saveurs nous suivent de façon constante jusque dans une finale assez longue. Finale amère/acide provenant sûrement de la torréfaction des grains (à moins que ce ne soit une levure sauvage qui commence à peine à se montrer le bout du nez). En se réchauffant, on a définitivement les arômes de sucre grillé sans pour autant avoir son côté sucré.
Sensation : Corps moyen, effervescence moyenne, longue finale très chaleureuse, piquant alcoolisé sur la langue.
Bref : Au début, on a vraiment droit à une bière très égale du début à la fin : brûlé amer et légèrement acide avec une bonne chaleur en gorge. Très bien, mais rien d’impressionnant. Lorsqu’elle atteint la température pièce, on a davantage une transition vers des notes de bois et de sucre grillé, sans pour autant que le côté brûlé ne s’efface. L’aspect acide, lui, n’est plus un facteur. Elle est donc meilleure plus chaude, mais ne se démarque pas au niveau de la qualité pour autant. Je dois avouer avoir été quelque peu déçu, car je m’attendais à plus d’une Imperial Stout vieillie en fut de Bourbon provenant du Trou.

2012-12-31. Black body with a nice foamy brown head. Odd aroma, dry lightly dusty dark malt, very light roast, light alcohol character. 7+ Flavour is interesting, light funky vaguely Belgian character to dark malt, dark fruit and mild alcohol. Less roast than in the aroma. 7+ Smooth average plus to medium bodied palate is very effervescent, softly so. Decent, bit unusual I wasn’t entirely sure what to make of it. Bottle at Volo, Toronto

750ml bottle, dark brown color, with a big bubbly tan head, nice sweet cocoa powder, yeasty, fruity, light vanilla, subtle grated coconut, chocolatey, coffee nose, with a mild grainy roasted, chocolate, black, toasted malt, chocolate icecream accent, and strong liquorish bourbon aged barrel aroma when the beer warm, follows through on a medium-bodied palate with a warmth, yeasty, fruity, smooth bourbonish woodiness, vanilla, grated coconut, chocolate cake, fruitcake, brownie, brown chocolate, dried fig, raisin, date character, with some brown sugar, cookie dough, light plum juice, light roasted, chocolate, black, toasted malt, and a kind of cola flavours, leading towards a warming fruity, yeastiness, liquorish bourbon barrel, vanilla, coconut, chocolatey finish.

750ml shared by ygtbsm94: Pours a barely transparent dark mahogany with a stringy-lacing beige head. Has a sweet dark caramel and smoked malty nose with some brown sugar and vanilla notes. Starts with pretty good fullness and fine carbonation with a hint of vinous oak and sweet dark caramel maltiness with some dark chocolate and earthy smoky bitterness toward the finish. Pretty well-balanced and should age well.

Pours a dark oil like black with a espresso like tan crema head. Very smoky, roasted malts, toast, caramel, coffee all on the nose. Big and bitter on the palate, a sharpness to the smoky flavour that is coming from the barrel aging. Intense and enjoyable.

A deep dark stout with a thick frothy brown head. In aroma, bitter chocolate, licorice, peaty notes and alcohol warmth. In mouth, a smooth peaty chocolate with burned coffee, vanilla, aniseed, loads of alcohol, nice. Tasted with GRM, Puskinwow, Boutip, Ian, Mike on Sept. 7 2012.

UPDATED: JUL 14, 2016 Updated rating thx Alex for buying. A: bourbon, licorice, alcohol, chocolate, figs, dates App: pitch black thick lasting beige head t/p: full body with short bitter finish. border fizzy carbonation. O: Although I was warned that carbonation was too high I’m still surprise to see how high it is. You better use glass with a carbonation chimney to flatten your beer faster. This carbonation make the beer appear thinner when it’s not. I’m almost sure that Tdd didn’t meant it to be that way. That put aside, still a decent Ba the wood is not in your face a thing I tend to prefer better now.

A really interesting imperial stout. Pours a dark muddy black with a soapish beige head and tons of huge bubbles. The nose is amazing with an overlying bourbon wood note, funky fruit and yeast notes, toffee, espresso and vanilla. Smooth and silken taste with an expressed roasted malt and coffee bean note. Rich and dessert like but a tad bit watery. Overall an exceptional brew
