COMMERCIAL DESCRIPTION
Avec L’Ours, les assembleurs du Trou du diable vous proposent un concept évolutif : chaque assemblage à venir sera distinct, laissant parfois jouer des notes plus intenses, qu’elle soient acidulées, amères ou fruitées. Il s’agira toutefois d’un mélange à vingt pourcents d’une bière de seigle sûre vieillie deux ans en barrique de chêne de Banyuls, et quatre-vingt pourcents de jeune saison. Le nez, aux notes délicates de rancio et de fruits séchés, portera d’abord à croire que nous avons affaire à une bière sûre. La bouche nous proposera aussitôt une bière jeune, acidulée et subtilement boisée, le tout s’étirant en une finale rafraîchissante.

No. 4 version. Pours dark straw fast fading head and no lacing. Nose is quiet, maybe some lemon. Flavours are tart fruit like lemons, some barnyard funk. Taste light sweet, medium sour. Medium body with medium carbonation. Pretty approachable sour.

Great variation from batch to batch. 001 was amazingly funky. 002 smelled awful, but once the smell was gone it tasted good although with less sourness. 003 didn’t have the smell problem but the funkyness did decrease a bit from the first batch. Very refreshing, nice head, funky, fruity, well balanced.

Bottle thanks to Pierre. Pours cloudy gold white head. Nose/taste of white grape, oak, wine, lemon, earthy funk and lightly soured stone fruit. Lighter medium body.

Pours golden with a frothy white top. Aroma is tart, farm and fruit. Taste is light grains, tart fruit. A little farmy but there is no pucker in this. A good entry sour for someone that wants to try something out.

Blend 002. Crisp light amber with light head. Quieter scent than expected. Woody muted flavour. Foamy body. Interesting herbal woody lightly sour beer.

B003 blend. This one works great. More funk, more sour and probably one of Trou du Diable’s best beer. by the way, B002 would not have gotten this rating. It was easy drinking and tasty but not at the same level as blend 3. Find it, buy it and judge for yourself.

Bière couleur de paille, trouble et coiffée d’un fin col éphémère marquant peu le verre. Au nez, des agrumes, du raisin blanc et du cuir. Elle est bien acide, légèrement amère et quelque peu minérale. Elle est lisse, de corps léger, moyennement effervescente et se termine sur une courte morsure acidulée.
