COMMERCIAL DESCRIPTION
Avec L’Ours, les assembleurs du Trou du diable vous proposent un concept évolutif : chaque assemblage à venir sera distinct, laissant parfois jouer des notes plus intenses, qu’elle soient acidulées, amères ou fruitées. Il s’agira toutefois d’un mélange à vingt pourcents d’une bière de seigle sûre vieillie deux ans en barrique de chêne de Banyuls, et quatre-vingt pourcents de jeune saison. Le nez, aux notes délicates de rancio et de fruits séchés, portera d’abord à croire que nous avons affaire à une bière sûre. La bouche nous proposera aussitôt une bière jeune, acidulée et subtilement boisée, le tout s’étirant en une finale rafraîchissante.

Assemblage #9, vieilli près d’un an. L’Ours présente une couleur jaune, même un peu blanche, avec une petite effervescence, et malgré le vieillissement, présente un petit collet. Au nez et en bouche, on trouve en avant-plan beaucoup de levures sauvages, du surette, et est-ce de la brett ou des levures sauvages? Pas certain mais il y a quand même un bel équilibre. Au gout c’est plus complexe, avec des petit fruits sechés, du sucre, de la brett subtile, et un goût de levures de saison Très intéressant, bel assemblage. J’encourage TDD à en faire encore plus souvent!

Bottle... Pours cloudy and yellow with a small, foamy, white head. Good retention. A small frothy white collar. The aroma is super fruity - apricot, pluot, plum and lemon. Light-bodied and astringent with stinging carbonation. The flavor is lightly tart, mildly fruity and citric with a Sahara-dry finish. Bottle courtesy of MartinT!

Cloudy pour. The nose is softly fruity. Has a bit of light lactic character and a lean bright zestiness. There’s a bit of light pepper and some nice peppery character. Slightly herbal and a bit peppery. Pretty solid.

Appearance: cloudy pale gold with a short white head diminishing rapidly to a thin skim, no lacing. (3/5) Aroma: citrus, funky wet straw, white wine, light lactic. (8/10) Taste: moderate-low sweet, moderate tart, light bitter. (7/10) Palate: medium-light body, moderate carbonation, crisp tart finish. (4/5) Nice easygoing wild. Smells a bit more tart than it tastes - not sure if a little more sweetness would bring it out more, or not, but there’s just a little something lacking on the tongue. Nice funk, though, and a solid wild. (14/20)

Batch #16, embouteillée le 28 juillet 2015... J’adore! Le côté sauvage peut être plus prononcé un peu mais c’est vraiment très bon. C’est à la fois sec et onctueux en bouche, ce qui surprend. Le goût de citron est juste assez mordant. Au moment de verser, les bulles ne font pas comme d’habitude, c’est un peu louche. Bravo le TDD!

Draught at Vices & Versa. Glad I finally got to try this, apple, lemon, oak, wheat, tart, herbs, funky notes with a brett edge, earthy finish. Good stuff, even though it could have been maybe a tad more crazy, looking forward to try future versions.

750 mL bottle. Pale body. Yellow. Big white head. Bright tropical hop aroma. White wine. Lemony tart aroma. Less tart in the flavor, though. Lemony again. Mild tropical hops. Wheat grain flavor. Light body. Very bright and drinkable. Really pleasant saison.

Gushing to small white head over coldhazed yellow-orange beer. Brett nose, floormop variety included, wet cardboard, other grains and lactic acid; lemon, buttermilk. Mild sour, lactic acid, again a bit diary/buttermilk. Sourish herbs, citrus; slightly woody. Quite light body, acidthinning. Feels well-carbonated, certain slickness (wheat or other grains). Nice mellow sour !

Poured at Shelton Fest in St. Pete. Pours a hazy yellow with a big head. Aroma is cereal grains, some lemon and lemon zest, funkiness, fart, and acidity. The taste is lemon and pears, tart from the wild yeast strains, some barrel, a little fart, and wood. Thin body, tart finish. Kind of meh.

Draught. Hazy yellow colour with a mediumsized creamy white head, which leaves some lace. Aroma is green apple skins, some citrus, mild yeast, and some lactic and acidic wood to it. Flavour is quite similar, with a quite big tartness to it. Somewhat dry palate.
