COMMERCIAL DESCRIPTION
Avec L’Ours, les assembleurs du Trou du diable vous proposent un concept évolutif : chaque assemblage à venir sera distinct, laissant parfois jouer des notes plus intenses, qu’elle soient acidulées, amères ou fruitées. Il s’agira toutefois d’un mélange à vingt pourcents d’une bière de seigle sûre vieillie deux ans en barrique de chêne de Banyuls, et quatre-vingt pourcents de jeune saison. Le nez, aux notes délicates de rancio et de fruits séchés, portera d’abord à croire que nous avons affaire à une bière sûre. La bouche nous proposera aussitôt une bière jeune, acidulée et subtilement boisée, le tout s’étirant en une finale rafraîchissante.

750 ml bottle bought at Dépanneur La Duchesse d’Aiguillon (in Quebec City) on February 6, 2014. Blonde misty, small head. Slightly sour rye aroma, slightly fruity wheat. Light fruity taste of wheat, a little sour, bitter grapefruit. A pretty good assembling!

Assemblage #7 en bouteille. Arômes de cuir, brett, un peu d’acidité, terreux. Goût légère acidité, cuir, baies, seigle. Amertume faible qui disparait rapidement en laissant place à un arrière goût de bière vieillie style gueuze. Palais léger, effervescence faible. Finale très sèche, très bon produit!

Assemblage #8. Bière dorée mais non éclatante offrant une pétillance arrogante lors du service. Cette bière est jeune et pleine de vigueur. J’aime ça! Au nez, je dois admettre qu’elle a perdu des points en originalité (mais pas en qualité) car elle m’a furieusement rappelé la Buteuse BS de la même brasserie. Du bois - beaucoup de bois - de la pomme, des raisins. Le nez est chargé et complexe. Le bois en trop grande quantité noie quelque peu les autres arômes qui méritent également une place dans ce mélange à la fois festif et organisé. En bouche, la densité est faible et le corps plutôt moyen, ce qui confère à la bière une buvabilité certaine. Outre le bis, on a affaire ici à une culture de levures sauvages importante dont la présence se caractérise principalement par une jolie acidité tout-à-fait en accord avec le vieillissement en barrique. Bière à la fois légère et complexe, il n’est que trop aisé de déguster cette bière à grandes gorgées.

Bottle 75cl, kindly shared @Bières culte. A cloudy yellow beer, nose is lemony with brett notes. Aroma is on dry lemon, quite subtle, light wet wood, vinous, acidic, light grape finish.

Bottle: Poured a hazy golden color ale with a medium size foamy head with good carbonation but minimal head. Aroma of tart notes with light dry funky ester is quite nice and well balanced overall. Taste is also a great mix between some tart notes with some oak notes also perceptible and light funky ester finish. Acidity is well balanced and doesn’t disrupt the overall balance. Body is about average for style with good carbonation. Great balanced and great complexity makes this a criminally underrated beer.

Bottle from Tommy, thanks man! Apperance is cloudy yellow with a thin layer of light white head. Aroma is lemon, brett funk, grass, and cheese. Taste is lemon, grass, light funk, cheese, oak, white wine, and a touch of nail polish. Mouthfeel is a touch thin, finishes dry and crisp with a bit of a meatlic aftertaste. Overall this is pretty solid, there is a little bit of off flavour in this bottle but not enough for it to ruin the beer.

Little hazy blond beer, small irregular white head, little stable, non adhesive. Aroma: sourish, lemony, funky, artificial brett notes. MF: soft carbon, medium body. Taste: pretty sour, vinegar, bit lemony, fruity, sourish, unpleasant sour. Aftertaste: lemony, some vinegar, peaches, bit sugary, little bitter, resinous, bit off.

Bottle from a trade. Shared @ RBBWG 2015. Orange colour, white head. Medium carbonation. Fruity notes of orange and grapefruit. Light vinegar. Sour with sweet hints. Easy drinkable and refreshing. Good!

Assemblage #6. Pour is silty gold with an uneven, short-lived white cap. Nose is funky wild saison, as you’d expect: musty/barnyard, oak, lemon, green apple, light vinegar/white white acidity. Taste is lightly sour, acidic, with lots of wild yeast mustiness and oak, but a little bit of club soda blah in the middle. The rye comes through a bit more in the taste, whereas on the nose I could barely find it at all. Really neat beer, especially from a Quebec brewery, and clearly well-executed, but lacking a little oomph, flavour-wise.

Thanks to JefVerstraete! 750 ml. bottle sampled @ RBBWG IV. Hazy orange, little white head. Nose is orange, sour USA-style, cheap Champagne. Taste is mineral, sour yoghurt, malty, mineral, lightly herbal, sour, touch horseblanket, orange peel, yeast, thick standard brett. Med. mineral body. Touch dry. Decent & satisfactory USA-style sour. Nice beer, a bit plain and simple.
