Blonde opalescente coiffée d’une généreuse couronne de mousse. On trépigne en humant ses arômes complexes d’agrumes et de fruits de la passion qui dévoilent les prémisses d’une satisfaction future. La bouche offre les mêmes fruits, parallèlement au goût d’épices produits par une levure saison authentique. Il en résulte une bière désaltérante, combinant avec un charme certain le flair du Nouveau Monde et la rusticité du vieux continent.

Bière jaune orangée, voilée, extrêmement effervescente et surmontée d’une très abondante mousse blanche. Arôme de houblon herbacé et citronné, agrumes (pamplemousse dominant), fruits tropicaux (ananas, mangue, fruit de la passion…), herbes et épices, un peu de levure. En bouche, c’est pétillant et mousseux, tout en apportant une certaine onctuosité au palais. Au goût, c’est surtout herbacé et citronné, on retrouve également le pamplemousse, les fruits tropicaux et un petit peu de levure. Cette bière est plutôt acidulée, et la finale amène un bon goût de houblon herbeux avec une amertume modérée.

Robe jaune, au nez les senteurs d’agrumes dominent. En bouche c’est l’explosion de ces arômes d’agrumes, mêlé à des notes épicés. Une bière très équilibrée et désaltérante.

Draft->stem at Partisan DC. Hazy gold with moderate fluffy white head. Yeast, grains, grass, citrus, floral spice. Dry. Decent saison, prototypical characteristics.

UPDATED: SEP 21, 2015 Bottle from Malt Attacks. Since every serious brewery around the world seems to have or want a saison nowadays, I am curious to find out what this renowned Canadian craft brewery made of it. Warm peach blonde colour with orangey hue, completely cloudy from the start, under a frothy, beaten-egg white, irregular head losing volume quite quickly but retaining well on the edges and leaving a landmap-shaped veil over the liquid. Aroma of overripe mango, soapy starfruit, overripe pineapple, bitter honey, field flowers, dry white wine, straw, earth, something undisturbingly sulphuric, sundried tomato, pink pepper, cucumber, jute; there are quite some phenols at work here too, which become stronger and band-aid-like in the end, making this beer increasingly less pleasant to smell as the bottle progresses. Crisp, estery onset of redcurrant, mango and apple peel, fairly strong carbo, bit minerally, pleasantly bready maltiness with a caramelly touch, ending dry and hoppy as well as yeasty, earthy, peppery and refreshing, with some of the juicy malts coming through and yeastiness lingering in the back of the mouth along with a subtle dash of warming, gin-like alcohol which does not become too obnoxious. More or less ’authentic’ feeling representation of the style, these people managed to capture the elusive and hard-to-determine ’spirit’ of true Wallonian saison to quite some extent, but too phenolic to truly shine.

Hazy yellow color, white head. Spicy, herbal, jasmine scent. Spicy, herbal, mint, sweet taste. Fresh aftertaste. Smooth mouthfeel, low bitterness.

600ml bottle. Clear golden colour with huge, fluffy, osteoporosing, moderately lacing, white head. Yeasty, floral and herbal aroma, a touch of citrusy hop, hints of hay, straw, chamomile, lemon, balm, sage. Taste is pale malty, minimally strawy, slightly herbal and floral, subtle sweetness, hints of balm, sage, chamomile, a touch of orange and orange zest; some sweet lemon in the finish, a touch of mild citric acid as well. Slightly disappointing at first sip, but slowly developing...

Bottle shared by Justin of Beaumont Market. Colour...hazy golden-straw with a thin white head. Nose...fruity, sweetly spicy and zesty with citrus pith. Palate...quite bitter to start and also quite dry, with notes of spiced fruit and Turkish Delight. The mid palate stays dry and then Cotlets hit the scene.The finish is bitter and fruity with notes of lemon curd.

[Backlog] Sampled at THE FESTIVAL 2014 in LA with Linh and Scarlett (and T.Hanson). Pours a nice golden body with thick fluffy white head and decent lacing. Aromas of peach, apricot gummies, melon and fresh grassy hop greet the nose. Mouthfeel is soft and sessionable with notes of fresh grass, clean fresh dough character. The yeast character is clean and low on the spice factor - which I love - and allows the beer to showcase more of the fresh dough and grassy flavors. Light funk and nelson/simcoe in the finish.

Pours a nice thick foam. Has a passion fruit and citric aroma. The taste is somewhat sweet and spicy. The fermentation is high and gives a good body for the beer. Bitter ending, leaves you wanting more.

Tap at Moeder Lambic Fontainas. Nice stuff. Initial aroma is quite vegetal, earthy. Soon cleans up though and gives way to light berry fruitiness and a bit of yoghurt. Taste is similar, light fruit and bit of dairy, finish has a light citrus bitterness, berries again and a touch of grain. Quite full bodied. Nice stuff.

Hazy yellow body topped by an active white head. Nose is fresh, featuring spiced malt and a hint of banana. A range of well blended and refreshing tastes make this a memorable saison. Lemon and mango hops, and spice including coriander, pepper and lavender are punched up by zesty carbonation. A thin body works with the taste profile. Another nice accomplishment from Le Trou Du Diable.
