Slightly hazy. Amber. Lightly spicy, a little sweet in the finish. Some dusty yeastiness. Nice mellow farmhouse ale - nothing stands out but a very pleasant quaff. The sort of beer if it was local you’d drink a lot of it.

(750ml bottle, best by 7/24/06) Medium off-white head atop an opaque amber body. Aroma is medium sweet, some herbal, light orange. Taste is medium sweet, caramel, nutty, pepper, some herbal, light chocolate, honey. Fairly dry herbal hoppy finish. Light-medium body, smooth with some effervescence.

Any first impressions?
-A veil of foam settles atop the murky orange.
-Minty herbs are suggestively laying on a heap of bready yeast.
-Pear juice and medecinal herbs propose a wacky flavor profile.
-The soft effervescence builds a pillowy mouthfeel.

What if you dig deeper?
-The careful aftertaste is herbal, and mostly powdery.
-Few sugars seem to be derived from the malts here; a fruit juice of some kind (pear?) is likely responsible. This sweetness is well-integrated into the structure of the beer.
-This Fantôme-like experiment is certainly an object of curiosity, and could manage to quench both your interest for novelty and your physical thirst.

From the bottle this pours a hazy dull amber body topped with a large and sustained white head. No lacing to speak of. The aroma is sweet with grainy malt and maple syrup, warm with brown spices, and has a touch of funky tartness. All blend together neatly in the flavor. Midway, a floral/herbal bitterness shows up and grows slowly. The finish is bitter and dry. Both interesting and satisfying.

Bottle (BB 09/08). Head is initially large, frothy, off-white, fully lasting. Body is hazy medium amber, bottle conditioned. Aroma is moderately malty (toasted grain), lightly to moderately yeasty (barnyard, basement), with notes of wood, autumn leaves, and dried fruit. Flavor is moderately sweet, lightly to moderately acidic, lightly to moderately bitter. Finish is lightly sweet, lightly to moderately acidic, moderately bitter. Medium body, watery/velvety texture, lively carbonation. A great, rustic, farmy de-garde/saison style brew.
