COMMERCIAL DESCRIPTION
The term “liquid bread” likely refers to this style of beer, as it traces its origins to German monks who made strong, full bodied brews to be consumed in place of solid food during Lent. Malt flavors shine in a Doppelbock, and hops take the back seat here. Our version makes use of Vienna and Bonlander Munich malts as the base, also incorporating Munich 20, Cara-Munich, Breiss Aromatic, and Chocolate malts for a hefty, toasty beer in flavor and aroma. Expect a deep amber color, a rich malty aroma, and a complex flavor that truly celebrates malted barley and it’s various forms. Look for plenty of biscuity and bready flavors, accented by caramelized sweetness, finishing smooth and mellow with hints of chocolate. Hops are used only for a counter to the malt sweetness. We used Tettenang hops for bitterness and Hallertau for flavor. No aroma hops were added. This beer was fermented on White Labs Southern German Lager yeast, which is richer in flavor and aromatics than our house lager yeast. Original Gravity: 18 Balling, Final Gravity 4.5 Balling. 24 IBUs (low hop bitterness and aroma)

Bottle courtesy of Numenor: Foamed vigoroudly upon opening. Pours a clear ruby mahogany with a big forthy tan head. Aroma of sweet caramel and German lager yeast with some light fruity notes and soft grain. Body starts with some mildly sweet caramel malt, quickly fading into a chalky, earthy, fizzy bland finish. Sort of dull and uninteresting, with too much carbonation and not enough balance.

Thanks to hopdog for breaking this open... Appears a dark amber color with a brown tone. A light tan head slowly fades into a small collar. Smell is of light caramel, hard candy, and mild cocoa. Taste is of the aromas but with a light sourness with an overly sweet and sour lacto acid flavor.

22oz bottle acquired in trade with The_Beer_God (thanks!). Poured a medium and lightly hazy mahogany color with a small sized off white head. Aromas of chocolate, roast, light caramel, and somewhat nutty. I like the aroma. Tastes of caramel and then a tart and almost sour dark cherry. Tastes was a big let down compared to the aromas.

Thanks to Hopdog. Pours a lightly hazy golden amber with a small bubbly white head. Aroma was sweet and malty, dark fruits, holidy spices and a bit nutty. Flavor was malty...yet sour. Something was off in the flavor.

Poured a hazy copper color with a small, light tan head that left light lacing on the glass. Aroma of roasted malts, smoked peat, nuts, and chocolate. Taste started off with sweet caramel, faint peat, then turning tart, with lemon and citrus. The aroma was very welcoming, but the flavor horribly disappointed. I also believe this too, spent a short time in the bottle. Legend really needs to work on the problem on their bottling line.

On tap at Green Leafe Cafe, Wmsburg, 4/2/06: Dark, dark red. Poofy head. Sugary caramel with just a hint of an alcohol base. Quite smooth.

On draught at brewpub: Clear brown body with a small tan head that quickly dies. The nose has sweet caramel, grass, sticky sugar, some bread. Taste begins with some sweet caramel, bread, malt, along with some light grass hops notes. Tthis one is missing the Legend house yeast characteristics I was expecting, but that’s not a bad thing for this style. Medium bodied, medium carbonation, though it seems too light bodied at times, and maybe a bit watery. I’d like my doppelbock to have a bit more full mouthfeel and more complex, thick & chewy malt flavors.
