COMMERCIAL DESCRIPTION
The term “liquid bread” likely refers to this style of beer, as it traces its origins to German monks who made strong, full bodied brews to be consumed in place of solid food during Lent. Malt flavors shine in a Doppelbock, and hops take the back seat here. Our version makes use of Vienna and Bonlander Munich malts as the base, also incorporating Munich 20, Cara-Munich, Breiss Aromatic, and Chocolate malts for a hefty, toasty beer in flavor and aroma. Expect a deep amber color, a rich malty aroma, and a complex flavor that truly celebrates malted barley and it’s various forms. Look for plenty of biscuity and bready flavors, accented by caramelized sweetness, finishing smooth and mellow with hints of chocolate. Hops are used only for a counter to the malt sweetness. We used Tettenang hops for bitterness and Hallertau for flavor. No aroma hops were added. This beer was fermented on White Labs Southern German Lager yeast, which is richer in flavor and aromatics than our house lager yeast. Original Gravity: 18 Balling, Final Gravity 4.5 Balling. 24 IBUs (low hop bitterness and aroma)

2007 and before - 7% ABV

Deep brown body with a frothy beige head. Rich brown-butter aroma with diacetyl and cigar notes, plus some perfume. Has a faint, but foreboding raunchy element to it. Flavor is of well-caramelized toffee plus dark toasted bread crusts and subdued butter. Takes on a cheesy character after a few sips. Something isn’t quite right with this and unfortunately Legend has a knack for that.

(Sample Date: 5/19/2009 Source:Legend Brewery) Pint at the brewery. Light caramelized malt aroma. Clear deep amber brown with a small white head. Malty and bready with a very light fruitiness. Finish is sweet and malty with a peppery yeast character. Pretty good.

A bit of an off odor that reminds me of musty something. It isn’t a show stopper but it is odd. The flavor hints of chocolate but has that flat funk. A drinkable beer but an odd beer. Not one of my favorites of one of my favorite styles.

22oz from Once Upon a Vine, Richmond. Fully expecting the worst, given the fragility of Legends bottles, I was moderately surprised to find this an enjoyable if unassuming doppelbock. Dark red pour, very transparent with the lightest of carbonation. Fruity malt aroma with a nice fluffy one-finger head. Caramel malts are certainly there in the taste, but there’s a very light, almost fleeting fruit quality to this, like a Lite version of the style. Not bad, and not an infected bottle, but nothing overwhelming.

Draft - A very thin, alcohol dominated beer. Hints of chocolate and raisen, but not one of the best offerings.

Pours a rich dark brown with ruby hues, not a lot of head. Aroma is oddly vinous, with tones of other dark fruit, took me a minute to decide how I felt about it, but in the end I really enjoyed it. Flavor is fairly sweet with strong over tones of rich fruit: cherry, and raisin, with lighter tones of figs and raspberry. A fair amount of sweet caramel malt, some moderate doughieness, overly sweet, but a lot of nice complex flavors. Only vaguely reminiscent of any other dopplebock I have ever had, but some really nice complex fruit flavors that make this a really nice beer.

Bottle. Pours a very dark amber with a full off white head. Great appearance. Beautiful aroma of bubblegum, almonds, with a touch of banana and a slight roasted note. Flavor is toasted bread, caramel with some roast and nutty flavors. A very slight off taste detected-maybe to caramelized or roasty. Med to full bodied, a very good beer overall.

750 ml. bottle. Pours dark amber with copper highlights and lots of tight camel-colored head that leaves nice lacing as it dissipates. Aroma is of dandelions, and sagebrush. Front palate of malt with nutty, woody middle and finish of chocolatey leather. Not and extraordinary example of the style, but is drinkable and fairly decent.

Bottle from Whole Foods in Charlottesville. Pours a deep ruby red with medium head and good lacing. Strong bubblegum/banana aroma. Smooth, malty taste, with a tad bit of coffee roastiness at the end. This is not very complex, but it isn’t bad.

22oz. This is kind of a confusing brew... It was pretty good out of the shoot but after being open for 15 minutes it seems to have gone flat. Initially I found some creamy notions in the nose, but after the 15 minutes it seems to have little to no nose. Body is mostly spice, a bit of caramel, and some copper on the finish. Another drain pour from Legend?
