COMMERCIAL DESCRIPTION
Dunkelweizen is a beer partially left unfiltered, this allows for the essence of the yeast to remain prominent thus giving it a cloudy appearance. Yeast is a strong character in this style of brew. Highly effervescent hints of banana, clove, bubblegum, and even apple can be detected from the yeast used. The body of the ale is usually amber to dark brown. It possesses a stronger malt character then the lighter Hefeweizen, with toasted flavors and a slight spiciness throughout -- you might even notice a raisin hint. The presence of so much wheat also contributes to strong ‘head’ retention and a slight tartness. Hops are not dominant in this style to off set any sweetness since there is so much personality in the yeast strain. Bitterness is at a minimum, with virtually no aroma or flavor from the addition of hops. While the base recipe was developed by the team of Legend brewers; brewer Alex Coppola specifically honed this particular recipe after weeks of over-analysis and a highly critical eye. He volunteered his services due to his “expert” credentials, which basically relies on the fact that German wheat beers are his favorite style. So after years of sampling all Germany has to offer, he embarked on this great brewing adventure. This beer’s profile stands strong, very complex from start to finish and definitely not boring -- kind of like sitting next to someone with a multiple personality disorder aboard a cross-country bus trip… and they have the window seat.

Tap at the brewpub Clouded blackish brown with a nice head. Smells like laffy taffy and caramellos with a touch of booze. Strong caramel roastiness with a pleasant banana background. Slightly oily finish that works well here. A touch of vanilla and booze evident here, this must be above 6%. Ap-4 ar-8 tas-8 pal-3 ov-17

22 oz. bottle. A deep, muddy brown pour with a HUGE mocha head. The aroma is strongly of cinnamon bread. Plenty of caramel, bananas, cloves and apples too. Solidly medium-bodied. Not too overwhelming in the taste department. Soft caramel, cocoa and breadiness nicely complement the wheatiness. Some roasty qualities in addition to some sour yeastiness. Finishes a little dry with some light bitterness and with quite a bit of cinnamon and spices hanging onto the back of the throat.

Has a nice sweet banana yeast flavor that ties in nicely with rich malts and chocolate. The combination makes for a very intriguing and delicious beer. Legend rocks.

Thanks to hopdog for this... Appears a hazy, murky brown with a small, creamy tan head that doesn’t fade out. Scattered lacing is left around the glass. Smell is of cloves, mild bubblegum, and cocoa with just a tiny hint of banana in the background...good interpretation of the style. Taste is of the same aromas. Mouthfeel is of cocoa, semi-dry, spicy, and mildly thin.

Bomber courtesy of the_beer_god. Pours reddish brwon with a tan head. Smells of fuit, caramel, dough, some sugar. Tastes fruity with a very nice full palate. As the beer warms, flavors of bananas start to come out. Slightly tarte on the finish.

Thanks to hopdog. Porus a hazy brownish red with an average small bubbly light tan head. Aroma of wheat, banana, citrus and a light roastiness. Flavor of yeast, roasty malts and some banana and wheat.

Hazy copper-brown. Nice nose, very wheaty, banana, clove, and sweetness, vaguely floral. Flavor is full of yeastiness, plenty of banana and clove, light roasts give a chocolate depth to it that sticks around nicely.

UPDATED: JUN 5, 2006 Bottle... Delicately hazy, very dark, ruby ale with a large, frothy, khaki head. Decent retention. Smokey, chocolatey nose. Beefy with a lesser note of Russian black bread. Chocolatey flavor with touches of banana and smoke. Mild bitterness. Medium-bodied with a watery mouthfeel and fizzy carbonation. Astringent, dry finish. Kudos to growler for sharing this gem!

Poured a hazy brown color with a small, off white head that left light lacing on the glass. Aroma of spicy clove, some banana, chocolate, nuts, and caramel. Taste of more clove, nuts, and caramel, some banana, citrus, and medium bitterness. Medium carbonation... this was really a nice beer, glad that it wasn’t infected.

Poured into a proper wizen glass… The body is a hazy brown with edges of amber. The head is a rusty hue of brown… it is tall and plentiful! The nose is massive with notes of banana, assorted nuts, clove, and for one of the first times ever I picked up suggestions of Big League Chew Bubblegum! He flavor brings some rich notes of caramel, toasted wheat bread, and plums and a bushel of ripened bananas! This is a very nice Dunkel… one of the best I’ve sampled!
