Lupulus Hibernatus is black-coloured beer, strong (9°), brewed with malted barley (“pilsen” type) and torrefied barley. The hops used are coming from Slovenia. At the end of the boiling, the brewer add a bit of cinnamon. This combination with the torrefied barley gives the Hibernatus a powerful taste. The after-taste is at the same time bitter and sweet, and finishes on a light coffee touch.

Bière de haut vol et haut titre (9 % abv…), refermentée, en bouteille de 75 cl. Donnée bien sûr comme bière d’hiver (vu le nom …) et annotée « just fabulous »… Nous devons vérifier … Couleur brun foncé intense, tout à fait opaque. Mousse beige café crème, et précisément très crémeuse, un peu dans le style de la Guinness à la pression … un rêve !!! Arômes de prune, miel de tilleul, orge, candi brun. 1ère bouche soyeuse à veloutée, à la belle entrée sur des malts torréfiés et grillés, fruits mûrs. Arrière-bouche très pleine. 2ème à la texture superbe et à l’équilibre fruits/bois/malts. Arrière-bouche avec juste ce qu’il faut de houblon sur cet ensemble. 3ème aux délicates pointes de chocolat et nuances de whisky. Arrière-bouche entière, intégrale, forte. La longueur monte en progression vers d’autres découvertes, un très grand moment avec des touches de café de luxe. La levure est forte, minérale, très belle veine adéquate au genre. L’alcool part en force, mais il tient vraiment les saveurs sur toute la longueur. La finale est une apothéose de saveurs. CONCLUSION : superbe bière qui peut entrer dans les quadruples de prestige. Des saveurs, de la puissance, un grand équilibre et une finale en apothéose.

Bottled. 75cl bottle. The aroma has caramel, bit toasted malts, dried fruit, prunes. Dark brown coloured beer with an off-white/beige, medium head. The taste is light bitter, light-moderate sweet, has dried fruits, some anise/liquorice, bit spice. Overall a nice Belgian strong ale.

Taste this 6 times, first on oct. ’13 bottle from Geers. Bit hazy and very dark brown color, with big beige head. Aroma: sweet, caramel, cinnamon, licorice, toffee, Medium to full body. Taste: sweet flavors,some black chocolate, toffee cinnamon, bitterness hops, soft alcohol notes. This beer with a little chocolate with cinnamon touch = great combination. (we done on 06.12.’13 with a beerclub) Well done, good brew !

Bottle midland tasting group. Murky brown colour light tan head. Aroma is burdock liquorice malts taste is same fruits nice sweet malts long bitter finish. Syrupy body. v good

Bottle @ Midlands Tasting Aug 14, at Richie’s Hop Palace. The general consensus tonight is this has a dandelion & burdock feel and I’d be inclined to agree, but with additional liquorice, caramel and malt.

Bottle@Midlands Tasting Group. Very dark brown beer with a small head. Aroma of toffee malts, licorice and dark fruits. Taste is licorice, toffee, syrup and dark fruits. Good stuff.

Cork and caged 750ml bottle shared between 6 of us at the Midlands tasting on 24th Aug 2014. I had the first glass so my glass had a dark brown beer that was clear unlike the lads who got their portion later as the sediment began to rise in the bottle. The head was a tanned affair and stayed. Glad to see my suggestion of Dandelion and Burdock flavours and smells were picked up by others in the tasting, liquorice was also a major flavour note along with semi-sweet malty molasses, mild coffee grains and spiced fruits of the forest. A very nice rich and smooth beer.

750ml bottle. Pours very dark brown with a small head. Aroma is liquorice, coffee and dandelion & burdock. Taste has cocoa with a sweet liquorice finish. Syrupy mouthfeel.

Bottle at Midlands Tasting Group; hazy dark chestnut brown pour with a thin bubbly beige head, aroma has sweet jam, burdock and some molasses, taste has dark fruits, caramel a hint of spice, and some sour action.

Clear dark brown color with a large, frothy to creamy, good lacing, mostly to fully lasting, beige head. Aroma is moderate malty, roasted, chocolate, moderate yeasty, dried fruit. Flavour is moderate sweet and bitter with a long duration, fennel , chocolate, caramel, yeasty. Body is medium, texture is oily, carbonation is soft. [20140118]
