My Bottom Line:
Biscuity, chocolatey malts are emboldened by brandy currents and resinous hop surges in this complex, lovable Barrel-Aged Imperial Stout.

Further Personal Perceptions:
-A slice of foam covers the darkness.
-Some roastiness accompanies the grassy hop resins, but the malt contribution is mostly chocolatey and biscuity.
-Light tartness follows in the finish, tannic passages.
-The flavor profile is balanced throughout.
-Alcohol warms up the finish and never takes too much room.

On tap at Festibière de Québec 2015. A deep dark ale with a beige-orange, short lived head. Aroma is chocolate, coffee, woody, brandy, hazelnut. Flavor is chocolate, coffee, hazelnut. Finish is wood, brandy, warm, sweet, candy. Lingering leather. Full body, weak carbonation. Very good!

Pours a good black with a small beige head that leaves good lacing. Nose is of brandy and chocolate. Taste is of chocolate, perfume, vanilla, scotch, and other spirits. Oak but in a really well-integrated manner. Body is medium-full, carbonation low to medium and I almost didn’t feel any alcohol outside of the flavoring. I mean, it wasn’t hot at all and that’s a good thing. Overall a really nice dessert, I could sip on this from time to time!

How: Sample at Festibière.

>>> A complex, well balanced and really vinous Imperial Stout. Solid stuff!

- Black with a medium rather easy to revive brown head leaving some lacing.
- The beer is really vinous and surprisingly not too boozy. In a blind tasting, I would probably have guessed this one was aged in red wine barrels rather than brandy barrels.
- The flavor profile is complex and all the components are cohesive. The harmony between red fruits and roasted malts / dark chocolate is very good, nothing is overpowering.
- The supporting flavors like molasses and spiciness (mild) fits very well with the main flavors.
- Despite everything going on in this beer and the brandy barrel-aging, the beer isn’t too heavy.
- I’m not the biggest fan of Brasseurs du Temps, but I must admit that their barrel-aged stuff is more often than not extremely well crafted and not overdone.

pour @ festibiere de quebec. very dark brown with a nice creamy beige cap, reviving and leaving nice lacing. spicy roasted chocolate, red grapes, raisins, lots of red fruits - hint of tartness; molasses, concentrated soy sauce, including salty minerals, other spices. light carbonation, medium to full body - oily; semi-sweet, woodsy and smooth fruity-spicy finish. turns out vinous mlre than brandy-aged. very good stuff!

A deep dark stout with no head. In aroma, smooth sweet fruity chocolate malt with light dark fruits, molasses, alcohol warmth, very nice. In mouth, a nice sweet fruity chocolate malt with licorice, molasses, alcohol warmth, soy sauce, very nice. On tap at brewery.

UPDATED: MAY 5, 2014 En fût au BDT. Couleur brune-noire...mousse brune. Arôme de chocolat et espresso..un peu de bois, presque de fumée. En bouche, wow...soyeuse, chocolat, un peu da café au lait, cuir, chêne..le bois vient rehausser le tout mais l’équilibre est parfait. Les saveurs se mêlent sans se nuire. Excellente. Cuvée 2009 bue en 2014. Excellente, plus douce, veloutée, équilibrée. wow

Brasseurs du temps prend contrôle des lignes du Brouhaha 2013. Superbe bière d’ébène coiffée d’une dense écume laissant au verre aune large dentelle. Des arômes d’expresso, de beurre et de toffee. Elle est bien amère avec quelques sucres résiduels. Elle est veloutée, de corps baraqué, finement effervescente et se termine longuement sur des arômes ça pu tu aux et une infime astringence.
