On tap at the brewery, deep black color, with a tan head, smooth oaky barrel, woody, chocolate, cocoa, vanilla, mild black coffee, burnt fruitcake nose, with some dark dried fruity fig, raisin, date, burnt toast, dark bitter chocolate baking bar accents, with a mild roasted, caramel, dark malty note in the aroma follows through on a full-bodied palate with a nice warmth vanilla, cocoa, chocolatey, black coffee, woody oakiness, light whiskyish character, with some dark bitter chocolate, burnt brownie, burnt fruitcake flavours, with a mild flowery leaf hoppy, burnt toast undertone, leading towards a warming, oak barrel, whiskyish woodiness, dark bitter chocolate, dark dried fruits, roasty bitterness finish.

Sample on tap at Bières et saveurs (Chambly). Pours black with frothy beige head. Great bourbon aroma (not much else). Taste has slight torrefaction, alcohol and slight acidity. May have been served too cold to be fully appreciated.

My Bottom Line :
Portentous bourbon and candy slather this Barrel-Aged Imperial Stout’s chocolate and umami flavors.

Further Personal Perceptions :
-A ring of foam surrounds the blackness.
-Alcohol hits hard as well.
-Mouthfeel is silky and rich.
-Earthy flavors seem to come from cocoa.
-Umami expresses itself as soy from time to time.

On tap at the brewpub. Pours an opaque black body with a thin brown creamy head. Wonderful, complex malty/hoppy aroma with bourbon, oaky, cocoa, and vanilla hints. Its rich, well balanced taste carries vineous, oaky, and rhum notes. Ends with a long, warming bittersweet finish. Awesome!

on tap at brewpub. very dark to black pour, decent beige ring for an aged beer, some retention. non overwhelming oak upfront, lots of roastiness, light vanilla, leather. soft carbonation, full body, hint of sweetness nicely balanced by grassy hops. another great brew from bdt.

En fût au BDT. Couleur brune-noire...mousse brune. Arôme de chocolat et espresso..un peu de bois, presque de fumée. En bouche, wow...soyeuse, chocolat, un peu da café au lait, cuir, chêne..le bois vient rehausser le tout mais l’équilibre est parfait. Les saveurs se mêlent sans se nuire. Excellente.

In short: A thick slimy chocolaty barrel aged imperial stout. Very good.
How: Tap at brewpub
The look: Black body topped by a tan ring of foam
In long: Nose is chocolate, vanilla and light wood barrel notes. In mouth the body feels thick and slimy. This a lot less roasted and crisp than the regular version. Taste of black chocolate, coffee beans, vanilla, tar, soy sauce, wood barrel. This is a very good beer but I slightly prefer the regular version. I had that beer on the first anniversary party of the brewpub. And by the time I was drinking it we were talking about our waitress breasts… with the waitress (no kidding). I would normally this kind of behaviour totally unacceptable, but for me I’ll make an exception.

A deep dark stout with a thin brown head. A plesant aroma of chocolate, vanilla, coffee grind, and light soy notes. In mouth, a bitter chocolate and coffee, very smooth and yet challenging, with nice raspy finish in mouth. On tap at the pub, at BdT 1st Anniversary, May 15 2010.
