[on tap at brewpub] Strong tropical fruit aroma with a little black pepper. Foggy orange-yellow under lacy white. Very sweet pineapple flavour with a fruity, sour tang and low bitterness. Moderate to low carbonation, sweet and sour finish, refreshing with a light body.

Appearance : Hazy yellow, some lacing not much.
Aroma : Yeasty, quite spicy and a bit peppery. Some wheat and coriander. Some fruity hops with notes of passion fruits.
Taste : Yeasty with notes of banana. Some spices and a little bit tart. Crisp. Finish is a little bit hot. Not too much considering its 9%
Palate :
Overall : Refreshing and rather drinkable. Taste is pretty spicy. Taste better than nose. Quite crisp. Very nice beer.

On tap at the brewpub. Hazy blond body with a thin white creamy head. Nice, fresh malty/hoppy aroma with fruity (peach, pineapple, orange) hints. Alcohol is very well hidden. Its well balanced taste carries honeyish, yeasty, and banana notes. Ends with a decent bittersweet finish. Enjoyable Tripel.

On tap at Brasseurs du Temps. The color is a hazy golden with a thin beige head. The aroma is sweet and fruity. The taste is spicy and sweet the 9% alcohol is present but does not effect the taste. As it warms up the taste you can feel more of the citrus fruits and other s like bananas, also the malt. This is a very good triple.

Présence d’un moyen col mousseux et d’une large dentelle sur le verre. Saveur: Goût d’agrumes avec une pointe d’houblons herbacés et d’épices. Durée moyenne de l’arrière goût. Draught at the brewpub. Pours a very hazy yellow-gold with a creamy white head. Aroma’s quite nice: Yeasty with a light sugary sweetness, some alcohol, fruit and floral hops. Nice flavour follows the aroma: Yeast, light spices, alcohol, fruit and floral hops. Spicy, bitter finish. Average bodied. This has to be the best Quebec Triple I’ve tried, it’s great!

2009-11-17. Dark yellow with a small off-white head. 3+ Pleant aroma, mild yeast and spice, fruit, muted perfume like character that is not unpleasant. 7+ Flavour is similar, fruity, light yeast, mild spice briefly becomes a bit floral, and a touch of perfume again before a bit of unexpected bitterness in the finish. 7+ Average palate borders on light but is quite smooth and seems to suit it. Draught. At the brewpub. Slightly hazy gold with an average creamy white head. Aroma of alcohol (fairly strong), spruce, sweet almost candyish malt, ginger, dry yeast and some grassiness. The taste was quite remarkable, a really good trippel made in Canada! - light dry grassiness, spice and tons of yeast, appropriate alcohol, and sweet but not cloying malt - all well-balanced against each other. Slick, astringent, very lively mouthfeel, the alcohol rises to the top by the end of the spicy finish - really solid, well done!

My Bottom Line:
This highly estery Tripel boasts banana and pear fruitiness atop sweet cereals and herbal, leafy hops and their bitterness. Classy and balanced, this is as idiosyncratic as it gets for the style while never falling into the depths of quirkiness.

Further Personal Perceptions:
-A veil of foam tops the cloudy blond.
-This is dangerously drinkable for 9%!
-Like most of Dominique’s creations, this one is not a recreation of style expectations, but rather a unique twist on it. To me, this one is a Tripel leaning towards pale Weizenbocks.
-The body is rounder than expected; I usually prefer crisper Belgian ales, but this one is full of personality, so I don’t really mind.
-Alcohol is almost a no show in the flavor profile.
