Cloudy light amber ale with an initially large, slowly fading white cover. Herbal. toasty, gently phenolic nose. The soft toasted malts veer toward caramel notions, but never quite go there, prefering to stay in a soft biscuity territory. Green, herbal entrance, quickly followed by light toast. Mid-palate is fairly neutral, bready, building up for the final herbal attack. Tea-like herbal tannic finish is on the dry side. Light yet ample body, Belgianesque in carbonation and texture. Fairly simple ale which I assume is geared toward food pairing and probably works in many cases, but is no show-stopper on its own unless you really love thyme.

Bottle: Poured an amber color ale with a large off-white foamy head with good retention and some lacing. Aroma consists of light cereal notes with light spices notes is not really memorable. Taste is also dominated by grainy and cereal notes with light spice mix that doesn’t overwhelm. Body is about average with good carbonation. I thought the spices were too hidden in the malt profile to really stand out.

750ml bottle, amber color, with a beige head, nice chestnut, nutmeg, faint spicy cinnamon, biscuity, caramel, toasted malty nose, with a light sugar pie, toffee accent, and some dried fruit, herbal spiciness notes in the aroma follows through on a medium-bodied palate with a nice yeasty, spicy, caramel, toasted, biscuity maltiness character, with a light nutmeg, cinnamon, chestnut butter, faint flowery leafy hop flavours, and within a light burnt brown sugar, spiced apple pie crust, gingerbread cookie undertone, leading towards a nutmeg spiciness, bready, biscuity, caramel maltiness, faint lingering leafy, grassy hop bitterness finish.
