(750ml bottle) clear deep brown, fine tan bubbles. Nose is smoky, dark raisins, toasty, brown sugar, lightly mossy. Taste is very smoky, sweet Brown sugar, almost syrupy. Medium body, a bit worcestshire like.

Bottle courtesy of Jay at Clockwork’s December 8th, 2012 tasting. Pours a deep blackish brown body with thin off white lacing. Aroma is roast and sweet cocoa. Mouthfeel is medium to thin with notes of sweet roast, light fruit, faint smoke, cocoa and spice.

Bottle (2011 version): Poured a deep black color porter with a large brown foamy head with good retention and some light lacing. Aroma if a complex mix of dark chocolate notes with light traces of vanilla and some clear notes of Citra which brings out some notes of dill that that work that well. Taste is also a weird mix between some black chocolate and light dry roasted malt notes with some very subtle trace of vanilla which clash with green hoppy notes of Citra with underwhelming notes of dill. Body is full with somewhat of an oily texture and good carbonation with no apparent alcohol. I ma probably going against the grain on this one but way too much Citra for my taste which kind of doesn’t hold well against the black chocolate and bourbon notes. Also the second use of the bourbon barrel leaves very subtle notes of bourbon which could be more pronounced.

2011 vintage. pours unclear very dark brown, red hue, with a small light beige cap, little retention, no lacing. sweet cloying dark nutty caramel and roasted malts, some cherries, bourbon vanilla, light acidity - low-profile bugs, bit of leather, cake. low carbonation, medium body - oily and sticky, sweet and bourbony finish. cloying and relatively linear but far better than their latest brandy release.

hill farmstead bottle share, the barrel aging here did a great job, tons of vanilla and bourbon flavors, the porter holds up well.

2 bouteilles de 750ml 2010 et 2011. Bouteille 525/700 de la batch 2010, liquide brun foncé avec une mousse beige. Un nez de chocolat, fruité avec du bourbon. C’est simple. La bouche est complètement mangée par le fût, c’est oxydé ! Madérisé, il ne reste que le bois et le bourbon avec un fond de vin rouge. Batch 2011 bouteille 690 de 700. Bière brune foncée qui ne mousse pas, un nez de tomate cuite et une bouche acide infecte, un 15 piastres chez le diable. Franchement les 3M ont attendus une éternité pour lancer ces bières, ils n’auraient jamais dû.

Version 2010. Bouteille 525/700. Une robe à la limite d’être noire qui ne développe aucune tête mousseuse. Un nez complètement écrasé par le bourbon. Un goût qui laisse paraître une base maltée chancelante derrière un bourbon vanillé envoûtant et débilitant. Des notes oxydées. Des vapeurs et des saveurs de vin cuit. Une bouche assez pleine avec un pétillement très bas et une texture épaisse (6-3-6-3-12). Version 2011. Bouteille 690/700. Un liquide à la robe presque noire qui ne montre aucune tête. Un nez vinaigré avec des notes boisées vertes, du ketchup et des vapeurs de bourbon. Un goût désastreux et insultant. Un mélange aigre de bourbon et d’herbes vertes, amères et acides. Où est la base maltée? Où sont les bonnes choses? Où suis-je exactement avec cette bière qui propose un potentiel de vieillissement de 5 ans? En bouche, un liquide bien mince. Je soupçonne une maladie. La finale est atroce, acide et astringente. Tout compte fait, une bière imbuvable (4-3-1-1-5).

Cask days 2011. Typical pour, big bourbon woody aroma. Loads of burnt malt, soy, and coffee, with that typical trois mousquetaire sweetness to the malt profile. Light fruit, and quite a bit more roasted malts. The finish is quite sweet, and woody with a little vanilla. The more is warms the boozier it gets and whoa does the bourbon really come through and overpower. Nice stuff but a little rough around the edges.

Bottled, 75 cl. Clear black with a small, almost non existent head. Roasted nose, licorice, oak, a whiff of smoke. Flavor is sweet deep roasted, very sugary, thick, leading to fruity hoppy, alcoholic, ashy finish.
