Bouteille de 750 ml, avec bouchon de liège, achetée chez La Barik (Trois-Rivières, QC). Arôme: Odeur de bourbon et de petit fruit rouge. Apparence: La couleur est noire opaque avec une faible densité de bulle. Présence d’un mince col beige mousseux et d’une fine dentelle sur le verre. Saveur: Goût de bourbon avec une pointe de chocolat et de fruité. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Moyenne effervescence en bouche. Pours very dark brown with a pretty low beige "head". Minimal to no lacing. Aroma is of bourbon, wood, dark fruits, caramel. Taste is of bourbon, wood, dark fruits, caramel. Palate: Full bodied. Low, but existing carbonation. Overall: A tad heavy/swilly, but not cloying. Better than what I remembered.

Cask days 2011.
Typical pour, big bourbon woody aroma. Loads of burnt malt, soy, and coffee, with that typical trois mousquetaire sweetness to the malt profile. Light fruit, and quite a bit more roasted malts. The finish is quite sweet, and woody with a little vanilla. The more is warms the boozier it gets and whoa does the bourbon really come through and overpower. Nice stuff but a little rough around the edges.

UPDATED: MAY 5, 2013 Bottle (750 ml) shared at Hill Farmstead Harvest Festival - 2011. Dark brown with a small beige head and some lacing. Aroma of Citra hops, bourbon, wood and hints of the complex aroma of the regular beer (chocolate, liquorice, raisins, roasted malt and list goes on). Taste is acidic and citrusy with light notes of bourbon, vanilla, wood, raisins, roasted malt and chocolate. Low carbonation. The regular version of the beer is heavier than this one. This beer is definitely complex but I’m not convinced about the balance. Bourbon isn’t that much present and the Citra dry-hop completely change the beer, maybe not for the best. I prefer the regular version of the beer but it’s still a very good one.

Nice tan head with used motor oil pour. FlVors of smoke and cherry come through in the nose. Very little smoke from the malts. Initial taste is tart cherry into choclate and coffee charry finish. Overall really nice but I would really like to see this aged in or with virgin oak barrels/chips for the price.

Bottle courtesy of Jay at Clockwork’s December 8th, 2012 tasting. Pours a deep blackish brown body with thin off white lacing. Aroma is roast and sweet cocoa. Mouthfeel is medium to thin with notes of sweet roast, light fruit, faint smoke, cocoa and spice.

Black colour, small brown like head. Pleasant aroma of roasted malt with licorice and some dark fruit along with it. Good mouthfeel. Roasted maltiness in the flavour along with some licorice and bit chocolate. Sweet. Pleasant.

Sweet stewed apples aroma graciously welcomes my tired self to. The head disappears in a minutes but starts off with a lovely, creamy brown. The complex notes of the aroma also include a bit of molasses.
Sweet beer dominated by molasses and caramel. A hint of anise almost like an after thought. The beer is very smooth on the palate. Very drinkable. The effervescence introduces a lot of depth and enjoyment.
Can't believe it's a 10% ABV beer since it feels so drinkable.

2011 vintage. pours unclear very dark brown, red hue, with a small light beige cap, little retention, no lacing. sweet cloying dark nutty caramel and roasted malts, some cherries, bourbon vanilla, light acidity - low-profile bugs, bit of leather, cake. low carbonation, medium body - oily and sticky, sweet and bourbony finish. cloying and relatively linear but far better than their latest brandy release.

Bottle. Pitch black with a small light brown head. Aroma is dark roasted malt, plums, chocolate, light coffee, licorice. Taste is close to heavy sweet and medium bitter. Medium body, oily texture, soft+ carbonation. Roasted light sweet and dry finish. Could do with more body and something to balance the sweetness.
