Raspberry pink bubbles form a tiny non-persistent froth that reveals their finesse. Delicate scents of rose petals, cherries and strawberries pleasantly tease your nose. Dry and quite sparkling, it then unveils notes of cherry pie, red currants and blackberries. Les Vergers de la Colline developed a exclusive technique where crab apple skins undergo maceration with apple juice for a while before the fermentation process begins. High quality nectar gifted with that particular “sunshiny” taste that will seduce just about everyone. A wonderful aperitif, especially if you serve it in an attractive champagne crystal glass and garnish it with a few chilled strawberries.

On tap at Avenue Pub. Pours a clear rose gold with medium frothy white head that lasts. The aroma is strong apple skin, pear, oak. Thin body, similar flavors to nose, nice sweetness, crisp, very good.

On tap at Le Projet - Belle robe rose, un peu acidule et sec. Le sucre est assez discret et domine par l’acidite.

Robe orangée-rosée parfaitement limpide avec une effervescence très active. Col de mousse léger et mince qui disparaît rapidement. Arômes de pomme, cerise noire et pêche avec un léger côté acidulé. En bouche, surtout de la pomme surette avec un fond de cerises et pêche. Très florale également et sucrée. Finale brève et sèche où un goût de pommes fermentées se dégage. Pas mal mais pas deux bouteilles en ligne.

Draught at Vices & Versa. Quite a delicious rose cider with lively carbonation, can feel peach, pear, berries, fairly dry finish. I guess I realy dig that style in general though.

UPDATED: DEC 30, 2015 12 oz. pour at Holy Grale. Aroma: Sweeter, tart variety of apple at play here - cherry-like tartness and other bright fruitiness with moderately sweet apple juice; skin aromas are low. Appearance: Yellow-pinkish pour with solid carbonation holding up a white cap; immaculate clarity makes this lovely to behold. Flavor: Sweet, fruity, tart all at once, but with a sustained juicy sweetness; skin notes come out more towards the finish, which is mostly dry. Palate: Light body, slick texture, average carbonation, abrupt finish. Overall: This was pretty neat stuff, a very different animal from the funkier ciders that are en vogue.

Bottle from the cidery. Clear pale pinkish pour with foamy disappearing white head. Aroma of mild apple, light floral character, apple peel, sparkling white wine aromas, light peachiness. Taste is lightly sweet, fruity, dry alcohol flavor, mineral aftertaste. Palate is light bodied and fizzy, dry mineral lightly boozy finish. Decent.

Appearance: Almost clear pale salmon with a no head and a lot of small bubbles.

Aroma: Soft with floral notes, red fruits / berries, sugary notes and apples.

Taste: Moderate sweet with strawberries, apples, mild acidic presence floral notes and mild cranberries.

Palate: Light body. Sparking. Moderately dry finish. Slightly acidic. Short aftertaste. Strawberries.

Overall: Soft and easy drinking. The mild acidity and the dry finish helps to make this really quenching. Exactly what you can expect from a sparkling Rosé. Good.

On tap @ Dieu du Ciel. Pink pour with a thin ring of white foam. A rather sweet cider. A lot of red berry and sweet apple juice. Slight blue cheese. Flavor is lightly funky and floral, but has plenty of sweet apple pie and sweet fruit. A hint of pear in there as well. Nice enough for a sweeter cider.

Bottle 355ml. Pours very clear salmon/pinkish with no head. Aroma is of apples, sugar, fruits. Taste is of apples, sugar, acidity, ripe pears. Not too smelly. Palate: Light-medium body. High carbonation. Overall: Refreshing. A bit sweet, but not overly so. Decent. Nothing off.
