Bottle. Head is initially small, fizzy, white, fully diminishing. Body is hazy dark yellow. Aroma is somewhat light notes of men’s cologne, apple skins, oak, barnyard, band-aid. Flavor is moderately sweet, moderately acidic. Finish is lightly sweet, moderately acidic. Medium body, watery texture, fizzy carbonation, moderately astringent, lightly alcoholic.
Another surprise, as was the Poire. After the 4+ awesomeness that is the Demi-Sec, I fully expected both of the other products to be amazing, but they’re just not. Stick your nose in a glass of the Demi-Sec and you’re treated to all sorts of aromatic treats...but here, it’s comparatively plain. Still better than your garden variety cider for certain, but it ain’t no Etienne Dupont, that’s for sure.

Bottle. An unclear golden cider with a huuge off-white head. The aroma has notes of apples, wood, and brett. The flavor is sweet with an acidic edge and notes of apples wood, and brett, leading to a dry finish.

Bottle sample at The Festival. Hazy golden color, champagne bubbles. Slightly more tart then the demi, but pleasantly so. Tasty.

Sampled at the 2013 Chicago Cider Summit. Pours a clear deep yellow with a white head that remains throughout the cider. Aroma has musty apple that is both sweet and tart. Flavor has more of a dryness that works with the musty apple and has bit of sweetness in the finish.

Tasting in between sessions at Shelton’s "The-Fest". Clear, dark, golden body. Smells buttery, sulfury. Browned apples & iron. Taste is skins & thin flesh. Bittersweet. Not all that "brut". Weak tartness, good acid. Tight carbonation. Sweet burn. Easy.

Poured at CiderDays 2012. Farmy aroma, with hints of grass and manure. A bit goaty, almost. Flavors settle down and stay clean and honest, with a parching dryness. Seems rather simple in the finish.

Bottle. Pours with a essentially clear, deeper golden hue with quite a bit of carbonation. Bubbly white head lasts for the better part of a minute. Aromas are very funky in the Normandy style. Brett, chlorophenolic bandaid and rubber. Barnyard, sulfur, light appley sweetness. Flavors are medium sweet, and typical of Normandy cider levels. Juicy. A bit more alcohol presence than most ciders from the region. Decent funk, crisp apple, hay and barnyard. Very lively carbonation, medium dry. An earthy finish with light tannins.

750ml bottle found at a supermarket outside of Paris. Appearance is just okay, a little head, a lot of bubbles, foggy light orange. Aroma of mostly pears and some apples, sour apples, wood. Flavour is that of very soft pears with a very soft finish. Very unintruding and not very complex.
