COMMERCIAL DESCRIPTION
Summ!t IPA is in the style of an American Imperial IPA. It predominantly uses a new variety of hop from the States called Summit. It is a dwarf variety that grows on a low trellis and has to be hand-picked, because the conventional harvesting methods don’t work on this growing system. The result is a hop that doesn’t get bruised, therefore preserving the essentially clean characters of the hop as it was on the plant.

The beer itself is 8.3%abv and is calculated to have 125IBU. For the purposes of not overstating the bitterness I have rounded this down to 75IBU. I used Golden Promise malt as a base with light and dark caramel specialty malts. To help flavour the beer I used Centennial and Simcoe hops to give a little more depth in flavour and aroma. A very small amount of Riwaka was also used to help sharpen the edge of the palate.

Oh my this is an amazing beer!! Such a pungent, oily, resinous hop aroma with an overpowering citrus character. Initially sweet up front but after a few sips the bitterness accumulates leaving me with a bitterness that cuts into my cheeks like a knife!! Awesome!

Draft at Hashigo Zake. Woah! This is in your face hops. Orange and pine on the nose, big grapefruit in the mouth. Perhaps a bit too much for my palate, but it sure gets your tongue racing.

Very strong hops, very earthy. Simcoe?
Strong malt, strong everything! A lot of beers like this are emerging recently, but this is one of the better examples.
