We drew inspiration from Steve’s Grandmother’s holiday biscotti recipe to create this one of a kind brew. By utilizing an array of malts, oats, wheat, pure local honey, light European hops and delicately spicing with Grains of Paradise, Madagascar vanilla beans, whole star anise, all brought together with traditional Belgian yeast, the result is a cloudy, deep copper colored, complex experience. This delight to the senses should be served in a 12 ounce footed glass and allowed to warm to 50 degrees to fully gather the malt and spice spectrum.

Pours hazy yellow with white head, aroma is spicy and sweet. Taste up front is sweet and caramel with some spices, and ends a bit bitter and dry. Not bad, but wouldn’t drink much more of this.

UPDATED: DEC 30, 2013 TAP: at Stub & Herb’s, 2.22.09. Clear gold/amber pour, nice belgian spicy aroma. Taste is pretty empty and boring, and a little thin. A little disappointing, but not bad.

Skyview (5360) - Papoose Jct, Minnesota, USA - JAN 17, 2009
On draught at Stub & Herb’s in Minneapolis, MN. Pours a hazy golden orange brew with a decent off-white head that has some spotty lacing and a thin white ring. Aroma of Belgian yeast, a hint of black licorice, vanilla, banana esters, some toffee and some clove. Taste is medium bodied, with flavors of banana esters, yeast, some cloves, vanilla, a hint of honey and a touch of licorice. Finish has a mild acidic character that leaves behind some honey and mild spice aftertaste.

This could use some refinement, but it is a good start. Licquorice aroma and anise in the flavor. Surprisingly dry, with lots of yeast, good real Belgian character.

22oz bottle from Atom, thanks Adam! Pours a crystal clear, deeper gold colored body with a finger-width, frothy and creamy, off-white head that dissipates slowly and leaves a nice lacing. Aroma is somewhat sweet with honey and Belgian yeast up front as well as a mix of licorice, banana, vanilla, and spices. A bit bready with maybe a touch of citrus. Flavor is similar. Some honey, bready caramels, and grains up front with a medium-light sweetness as well as a soft vanilla, Belgian yeast, a few estery fruit notes, banana, clove, and a touch of licorice. Finishes clean and dry with a light bitterness before leaving a lengthy aftertaste with some licorice, vanilla, and spice lingering. Medium body and a soft, moderate carbonation. Overall, a pretty solid beer. Easy drinking and well balanced with a lot going on. Love the vanilla, licorice, and honey combination with the lightly spiced Belgian yeast. Good one.

Great Belgian ale. Thanks malster85 for this one. Pours a reddish caramel color. Aromas are nice and malty. Sweet caramel aromas with warm spices. Beautiful anise aromas. Flavors are bready and caramel. Warm spices and anise. Good stuff.

2011 bottle to snifter. Pours dark amber and clear with a fluffy soapy head that dissipates to a collar. Aroma is spice malt and yeast with a bread like biscuit scent. Taste is spice some faint bubblegum yeast and malt with a slight hint of burnt vanilla. Palate is thin to medium with a good carbonation and a little heat and finishes dry. So so brew, but nothing making me want more!

Tap at Pig and Fiddle on January 20, 2012. Orangish brown pour maybe but this damn bar is too dark to tell for sure. Aroma is bready, sweet, little honey. Taste is similar to aroma with a spicy kick and throw in a mild bitter and dry finish.

Bottle: Reddish orange pour with a thick foamy off white head. aroma is Belgian yeast, honey, light banana, vanilla. A lot more spice and vanilla coming through in the flavour, very sweet. butter cookie, malted wheat. that distinct belgian yeast coming through towards the finish where it leaves with a hint of alc and more spices.
